We were eating so many that I worried I wouldn't have any to decorate!
I whipped up a batch of royal icing using real maple syrup and was happy I had cookies to decorate because the flavor combination was amazing.
The warm spices in the pumpkin cookie mingled with the sweet maple syrup-flavored royal icing are perfection.
The royal icing hardens enough so that you will be able to stack or package the cookies once they are dried, but because of the addition of the maple syrup, the icing stays a bit softer than traditional royal icing, which is really nice.
