These French-style butter cookies, known as Sable Cookies, have a distinctive sandy texture, a rich buttery flavor, and a wonderful crunch. They are easy to make and taste great plain or dipped in chocolate.

These classic cookies make delicious cut-out cookies for the holidays or any day.
You can make and roll the dough into a log and cut the log into round slices or you can roll it out and cut it using cookie cutters.
The dough will spread just slightly but will hold its shape nicely. These cookies are crispy and taste great all on their own, but can be dipped in chocolate to make them taste even better.

Recipe

- 1 large hard-boiled egg
- 10 tablespoons unsalted butter softened
- ½ cup sugar
- ¼ teaspoon salt
- ¾ teaspoon pure vanilla extract
- 1 ½ cups all-purpose flour

Peel the hard-boiled egg.

Cut the egg in half and separate the white from the yolk.

Discard the egg white or enjoy a little snack.

Push the egg yolk through a fine-mesh sieve into a large mixing bowl.

Add the butter, sugar, and salt to the egg in the bowl.

Use an electric mixer to cream the butter mixture until light and fluffy, about 2 minutes.

Add the vanilla and beat until well blended.

Pour in the flour and stir just until the cookie dough comes together.

Use your hand to press the dough together in a ball.

Flatten the dough into disc or roll it into two 2-inch diameter logs and wrap in plastic wrap or in a zip-top bag.

Chill the dough in the refrigerator for 2 hours.

When ready, remove the disc of dough and let it rest at room temperature for 10 minutes.

Then roll half of it out onto a silicone mat or a flour-dusted counter top to ¼-inch thickness.

Cut using small 2-inch cookie cutters, re-rolling as needed.

If you rolled the dough into a log, remove it from the refrigerator and use a sharp knife to cut ¼-inch thick slices.

Set the cookies on parchment paper-lined baking sheets.

Chill the cookies in the refrigerator for 30 minutes.

Meanwhile, preheat your oven to 350 degrees Fahrenheit.

Bake the cookies, one tray at a time, for 12-14 minutes until the edges turn light golden brown.

Remove the cookies from the oven and let them cool completely on the baking sheet.
If desired, brush the tops or edges of the cookies lightly with egg white then sprinkle on some Dixie Crystals Gold 'N Natural Turbinado Sugar. This will give your cookies a nice crunch and add some sweetness.
Once the cookies are cooled, you may also dip them in chocolate.
