Pumpkin Chocolate Cups

These Pumpkin Chocolate Cups are the perfect sweet treat for fall. Each candy has a delicious pumpkin spice filling inside the chocolate candy shell.

Pumpkin Chocolate Cups are filled with creamy pumpkin and speculoos cookie butter filling.

I was really excited when Dixie Crystals asked me to create a version of a peanut butter cup with pumpkin filling.

Experimenting with this recipe was so much fun and I am thrilled with the final recipe.

After playing around with various combinations of ingredients I finally decided to blend pumpkin puree with creamy Biscoff Cookie Butter (speculoos cookie spread), brown and powdered sugar.

OMG, the filling is incredible.

The spice flavor of the cookie butter mixed with the pumpkin is perfection. The warm cinnamon, cloves, ginger, and allspice really come through. I did boost the flavor by adding just a pinch more pumpkin pie spice but you could leave it out and still have a delicious filling.

The texture is amazing too. I dried out the pumpkin puree to ensure the filling was creamy and smooth not wet. It worked perfectly.

    I would have never thought to make pumpkin chocolate cups… and I love the chocolate/pumpkin combo, so I bet these are delicious!
