    Strawberry Kiwi Fruit Pizza Watermelon

    This festive summertime dessert was a huge hit at our recent pool party. Not only did everyone get a kick out of the fact that this Strawberry Kiwi Fruit Pizza looked like a watermelon, but they loved the wonderful combination of a sugar cookie crust topped with a cream cheese fluff covered in fresh kiwi and strawberries.

    I was happy this recipe made two pizzas because one was not enough.

    It's refreshing and sweet just like watermelon, has a slight tang from the cream cheese, and a bit of a crunch from the cookie crust. Oh, and there are bits of chocolate on it too. A dessert just isn't a dessert without a bit of chocolate, in my opinion.

    If you are hosting a pool party or are just looking for a unique dessert to bring to a summer picnic, this fruit pizza watermelon is sure to please.

    This fruit pizza couldn't be easier to make, but be sure to top it with your fruit within a few hours of serving. The fresher the fruit, the prettier your watermelon will look.

    Being our pool party was impromptu, I didn't have much time to pull this together, so it was great that it came together quickly.

    How to make a fruit pizza using a sugar cookie and cream cheese fluff.

    How to Make a Strawberry Kiwi Fruit Pizza Watermelon

    • Bake 2 round cookie crusts.
      • Use parchment paper lined springform pans to make removal of the baked cookies a snap.
      • If you use regular cake pans, you definitely want to line the pan to make sure you'll be able to remove the cookies from the pans.
    • While the cookies are cooling, you can whip up some cream cheese fluff.
      • Just beat cream cheese until light and fluffy, add marshmallow fluff and whipped topping and beat until combined.
      • Then try to keep from sticking your finger in the bowl and eating too much of it so you have plenty to spread over both cookie crusts.
    • Cut each cookie in half before decorating with fruit.

    • Arrange thin slices of kiwi all along the edge of each cookie crust, forming the rind of the watermelon.
    • Then top the rest of the cookie with strawberries.
      • Most strawberries have white centers and you really want to just use the red part, so carve the bright red portions off the strawberries, leaving the white interior behind.
      • You can snack on the interior parts or save them for a smoothie.
      • Finely chop the red part of the berries and sprinkle over top of the cream cheese fluff.
      • As you probably know, strawberries do not stay very fresh once they are cut, so it is best to decorate these fruit pizzas within a few hours of serving them. I have eaten leftovers the next day but it wasn't quite as good.
    • Place about 8 chocolate chips on each watermelon half and your fruit pizza is ready to serve.
      • Since I created my first Strawberry Kiwi Fruit Pizza Watermelon, I've seen several other people recreate this recipe using blueberries instead of chocolate chips. That works too!

    A fun twist on a summertime treat, this Strawberry Kiwi Fruit Pizza looks like a watermelon but tastes like a decadent dessert.

    Ingredients
    Cookie Crust:
    • 1 pkg. Betty Crocker Sugar Cookie Mix
    • 1 tablespoon flour
    • 1 stick ½ cup butter, softened
    • 1 large egg
    Cream Cheese Fluff:
    • 1 block 8 ounces cream cheese, softened
    • 1 cup marshmallow fluff
    • 1 cup frozen whipped topping thawed
    Toppings:
    • 4 kiwi
    • 2 pounds strawberries
    • 32 chocolate chips
    Instructions
    Cookie Crust
    1. Preheat the oven to 350 degrees Fahrenheit.

    2. Spray two 9-inch springform pans with cooking spray then line bottoms with a circle of parchment paper or non-stick tin foil.

    3. Combine sugar cookie mix, flour, and butter, and mix until the butter breaks up into small pie size pieces.

    4. Add the egg and mix until it forms a dough.

    5. Divide the dough in half.

    6. Pat one half of the dough in the bottom of each pan, spreading it so that it ends about ½-inch from the edge of the pan.

    7. Bake for 14-18 minutes until golden brown.

    8. Cool in pan for 10 minutes, then remove and set on a cooling rack.

    9. Cool completely.
    Cream Cheese Fluff:
    1. Beat cream cheese until light and fluffy.
    2. Add marshmallow fluff and beat to combine.
    3. Add whipped topping and beat to combine.
    4. Equally divide and spread over top of the cookies.

    5. Cut cookies in half.
    Toppings:
    1. Peel and cut kiwi into thin slices. Cut slices in half.
    2. Arrange overlapping slices of kiwi along the curved edge of each cookie.

    3. Wash and dry strawberries, then carve off the outer edge, keeping just the bright red fruit for the pizza.

    4. Cut slices into small pieces and sprinkle over the cream cheese fluff topped cookies.
    5. Arrange 8 chocolate chips on each cookie to create watermelon seeds.

    6. Refrigerate until ready to serve.
    Recipe Notes

    Store in the refrigerator until ready to serve. It's fine if it sits out at room temperature for up to 3 hours.

      What's the best way to cut into slices. I did not wait for the cookie to brown and it's still crispy. Would the cream cheese mixture soften it a bit? Thx

        Use a sharp knife to cut it. If you watch the video, you can see how I made the cuts. The cream cheese topping will soften the cookie. If your cookie is too crispy, go ahead and frost it with the cream cheese topping, cover it and let it sit in the refrigerator for a few hours. That should be enough to soften the cookie so it isn't too crispy.

      Beth, I am from Trinidad and Tobago (Caribbean Twin Island Republic) and came across this recipe on Pinterest. And I have to tell you, absolutely excellent! I winged it as I had no access to marshmallow fluff and frozen whipped topping (made substitutes) but I could not stop licking my fingers of the cream! Altogether it looks divine and I am certainly going to show off!

        Sure, you can keep the cookie whole! I just liked the look of of the half watermelon instead of a whole round watermelon, but either works fine. Have fun making your dessert!

      Last minute pool party for Father's Day and since it's going to be over 100 degrees outside I was looking for something quick, easy, refreshing and summer-y to make when I found this on Pinterest.       I love this recipe! 4th of July is upon us & this would be perfect! The only thing I'd do to it, just a teeny bit different is add a teaspoon of vanilla to the cream cheese/marshmallow spread. I have an icing recipe similar to this that calls for vanilla. You almost just want eat it with a spoon..😋😜Lol. I bet this would make a fruit dip?...Yum!

        Great suggestion. I love vanilla too and a little boost of vanilla flavor always makes a dessert taste wonderful. The filling is so good that it is hard to not eat it before getting it onto the cookie crust. 🙂
