Unicorn Cakesicles – Fun Birthday Party Desserts

Hand-painted white chocolate unicorns are filled with a creamy blend of white cake and vanilla frosting. These Unicorn Cakesicles make festive birthday party, baby shower, or Valentine’s Day desserts for kids of all ages.

Ever since I crafted my first cakesicles a few months ago, I have been eager to find fun popsicle molds to use to create more cakesicle designs and I have been thrilled to find a skull mold to create Skull Cakesicles for Halloween, and a snowman mold to craft Snowman Cakesicles for Christmas.

But, when I found the cutest unicorn popsicle mold, I kind of geeked out, I couldn’t wait to get into the kitchen to create these sweet Unicorn Cakesicles.

If you haven’t made a cakesicle yet, they are similar to a cake ball only they are made in a popsicle mold and in this case, the design is already created for you, all you have to do is paint in the colorful decorations.

White chocolate unicorn cakesicles are hand-painted with bright colors and are filled with a blend of white cake and frosting.

And these unicorns can be as colorful as you like. I opted to make my unicorns white using white candy melts, then I painted the unicorn’s mane using a rainbow of colors.

You can get creative and make the unicorn’s head a pretty pastel pink or blue or even peach then use either bright or pastel-colored candy melts to paint the mane.

How to make Unicorn Cakesicles

To create your cakesicles you first need to bake a cake and I chose to doctor up a white cake mix because it’s so easy and it tastes good too.

To make the cake ball filling you’ll stir in some vanilla frosting. You can use store-bought frosting or homemade buttercream. Either works fine.

Start by adding 1/4 cup of the frosting then add more until the cake comes together in a smooth ball. When making cakesicles you don’t have to worry about your cake ball mixture being too soft. If you like a lot of frosting in it, then add more!

Use Duncan Hines White Cake Mix to create creamy cake ball mixture.

You can see the printable recipe and video at the bottom of this post, but I suggest you read through these detailed step-by-step instructions first. There’s important information below.

Bake the Cake & Blend with Frosting

Ingredients:

1 box white cake mix (I used Duncan Hines® Classic White Cake Mix)
3 tablespoons instant white chocolate or vanilla pudding mix
3 tablespoons sour cream or Greek Yogurt
1 cup water or milk
2 tablespoons vegetable oil
3 egg whites
1/4 cup – 1/2 cup white frosting

  • Preheat your oven to 350° Fahrenheit.
  • Grease and flour a 9 x 13-inch pan or line the pan with non-stick tin foil.
  • Combine the cake mix with the instant pudding mix, sour cream, water, oil, and egg whites.
  • Using an electric mixer, beat on low speed for 30 seconds.
  • Then increase the speed to medium and beat for 2 minutes.
  • Pour the batter into the prepared cake pan.
  • Bake for 24-30 minutes until a toothpick inserted into the center of the cake comes out clean.
  • Allow the cake to cool completely.
  • If you want your cake ball filling to be really white, then carve off the top of the cake to remove the browned cake.
  • Crumble the cake into a large mixing bowl.
  • Stir in 1/4 cup of frosting.
  • Add more frosting if desired until the cake comes together.

I like to use a stand mixer when blending my cake ball filling but mixing it by hand works well too. Just use your hands to really blend it together once you get the frosting mixed in. This will help to create a really smooth filling.

What you’ll need to paint the unicorn pops:

You’ll start by melting white compound chocolate, also known as confectionery coating, candy melts, melting wafers, or almond bark. You can add oil-based candy coloring to the white chocolate to create colors or you can use colored wafers.

You’ll need:

  • silicone unicorn popsicle molds (I suggest buying at least 6 of these molds)
  • 24 popsicle sticks
  • food-use-only paintbrushes
  • 32-36 ounces white compound chocolate (confectionery coating, candy melts, almond bark), melted
  • 2 ounces each of bright pink, light pink, red, orange, yellow, green, light blue, and dark blue or bright purple candy melts plus either black or dark cocoa candy melts.
    • As an alternative, you can use oil-based candy coloring to color white compound chocolate.
  • edible gold luster dust

How to paint unicorn cakesicles:

  • Dip a clean, food-use-only, fine-tipped paintbrush into the pink candy melts.
  • Dab the candy over the rose cavity in the mold.
  • Then dip another clean paintbrush into the light pink candy melts and paint on the inner triangle in both of the unicorn’s ears.
  • Now begin to paint the mane by dabbing in dark blue or bright purple into the tuft of hair that is closest to the rose.
  • Continue to paint the tufts of hair in this order: light blue, green, yellow, orange, and red.
  • Use a very fine paintbrush to paint the eyelashes using black or dark cocoa candy melts.
  • Pop the mold into the freezer for about 3 minutes until the candy hardens.
  • Remove the mold and let it sit at room temperature for 10 minutes.
    • Your mold must not be cold when you add in the white chocolate.
  • Make sure your white chocolate is not hot to the touch, then fill the entire mold with white chocolate.
  • Carefully invert the mold over your bowl of white chocolate and allow the wet candy to drip out of the mold.
  • Shake the mold and allow more to drip out until you just have a nice thin coating around the interior of the mold.
  • Use a metal scraper to scrape off the excess so that the edge is nice and clean.

NOTE: If you want to keep your chocolate melted and warm for hours you can set your jars into a water bath in an electric skillet.

Insert a wooden popsicle stick into the wet white chocolate in the silicone unicorn mold.

  • Immediately insert a wood popsicle stick into the mold while the white chocolate is still wet.
  • Pop the mold in the freezer for about 5 minutes just until the white candy melts harden.

  • Let the mold sit for about 10 minutes to come to room temperature.
  • Press cake ball filling into the mold and, if necessary, under the popsicle stick.
  • Fill the mold to about 1/8th inch from the top edge.
  • Spoon white chocolate over top of the cake ball filling and spread it into an even layer.
  • Scrape over top using a metal scraper to remove all of the excess chocolate.
  • Freeze for about 5 minutes until the candy hardens.
  • Then unmold the unicorn and allow it to warm to room temperature.
  • Brush a light dusting of edible gold luster dust over the unicorn’s horn.
  • You can package your cakesicles in clear cellophane bags tied with a ribbon to give as birthday party favors or you can arrange them on a platter to serve as dessert.

Cake Ball Filling
  1. Cut off the browned edges of the cake then crumble into really small pieces.

  2. Stir in at least 1/4 cup of frosting until the cake ball filling is smooth.

  3. Press cake ball filling into the mold and, if necessary, under the popsicle stick.
  4. Fill the mold to about 1/8th inch from the top edge.
  5. Spoon white chocolate over top of the cake ball filling and spread it into an even layer.
  6. Scrape over top using a metal scraper to remove all of the excess chocolate.
  7. Freeze for about 5 minutes until the candy hardens.
  8. Then unmold the unicorn and allow it to warm to room temperature.
  9. Brush a light dusting of edible gold luster dust over the unicorn’s horn.
