    Mickey Mouse Galaxy Cookies

    These Mickey Mouse Galaxy Cookies are out of this world delicious! Each Mickey Mouse shaped chocolate cookie is covered in silky smooth chocolate ganache and is topped with blue, silver, purple, and white galaxy sprinkles.

    We have been busy planning a Walt Disney World vacation for my birthday next year and I've had Mickey Mouse on my mind. I couldn't resist getting into the kitchen to create some Mickey Mouse themed desserts.

    I started by making chocolate Mickey Mouse shaped cookies then glazed them with chocolate ganache to make them decadent enough for adults but sweet enough for kids.

    The glazed cookies looked great just coated in the shiny chocolate ganache but when I tossed on some blue jimmies, purple, silver and white nonpareils, blue and purple sugar pearls, purple rock candy, and silver star sprinkles, they were transformed into something magical.

    How to make Chocolate Mickey Mouse Cookies

    I wanted these cookies to be really chocolatey so I chose to start by making chocolate cut-out cookies. You could, if you prefer, use a basic sugar cookie dough instead.

    You'll notice that my cookies are really dark in color even before they are dipped in chocolate ganache. To get that deep dark color you'll want to use a dark or black cocoa powder like Hershey's Special Dark Cocoa Powder. That's my favorite!

    Not only do I love the chocolate flavor that it imparts, but I love the deep dark color of the cookies too.

    Chocolate Cookie Dough

    Ingredients:

    1 ¾ cup all-purpose flour
    ⅓ cup dark cocoa powder  (sift to remove lumps after measuring)
    ¼ teaspoon baking powder
    ½ teaspoon salt
    10 ounces unsalted butter, softened
    ¾ cups granulated sugar
    ½ teaspoon vanilla or vanilla bean paste
    1 large egg

    Instructions:

    • Whisk together the flour, sifted cocoa powder, baking powder, and salt in a bowl then set aside.
      • You can use a whisk or a fork to do this.
    • Beat the butter and sugar until light and fluffy using an electric mixer or a wooden spoon.
    • Mix in the vanilla and egg.
    • Then add the dry ingredients and mix just until combined.
      • This dough is quite stiff so it's best to use your hands to do the final mixing.

    Because this dough is very stiff I don't recommend using the electric mixer once you've added the dry ingredients. A stand mixer will be strong enough to mix the dough completely.

    Roll out chocolate cookie dough with Mickey Mouse Cookie Cutter

    Cut out cookies.

    • Dust a cutting board, your countertop, or a silicone mat with cocoa powder.
    • Roll out some of the cookie dough to about ⅛-inch thickness.
    • Use a Mickey Mouse cookie cutter to cut out as many Mickey's as possible.
      • I used a cutter that is 2 inches across the head and 3 inches from the tip of one ear to another.
    • Peel away the excess dough and move the cut-outs to parchment paper or silicone mat-lined baking sheets.
    • The cookies will not spread so they do not have to be too far apart, but keeping an inch in between cookies is a good idea.
    • Bake the cookies in a preheated 350° F oven for about 12 minutes. The time will depend on the size of your cookies.
    • You can tell the cookies are done when they no longer look wet on top and the edges feel set.
      • I personally like these cookies to be rather crunchy because the ganache will soften them slightly. If you like your cookies more doughy then bake them for less time.

    Make chocolate ganache.

    Adding a layer of chocolate ganache really makes these cookies look and taste amazing. You can use royal icing if you prefer, but I highly recommend going with the ganache.

    Ingredients:

    ⅔ cup heavy whipping cream
    8 ounces semi-sweet chocolate, finely chopped
    2 tablespoons light corn syrup

    Creating an emulsion.

    • Use a bowl and spoon or rubber spatula to make your ganache.
    • It is vitally important that you finely chop or better yet grate your chocolate into evenly-sized small pieces. I'm talking shavings, not chunks.
    • Pour that chocolate into a shallow bowl. The thinner the layer of chocolate, the better.
    • Create a well in the center of the chocolate ( a hole where you can see the bottom of the bowl). This will allow the cream to get under the chocolate more easily.
    • Heat your cream over medium heat to a simmer on the stove, just until bubbles begin to form.
      • Do not allow your cream to boil or too much water will evaporate which can cause your ganache to break (become greasy or grainy).
    • Immediately pour the hot cream over the chocolate, making sure it covers all of the chocolate. 
    • If you have patches of exposed chocolate, gently push it into the cream but do not stir!
    • Let the chocolate and cream sit, undisturbed for 3 minutes to allow the chocolate to begin to melt.
    • Then begin stirring the mixture in small circles in the center of the bowl.
    • As the chocolate and cream start to darken and come together you can begin to make your circle bigger.
    • Continue stirring until the cream and chocolate come together then widen the circle again and continue until the entire bowl of cream comes together.
    • Be sure to scrape the bottom and sides of the bowl.
    • Add in the corn syrup and stir just to combine.
      • The corn syrup will work to make your ganache shiny. If you choose to skip it the ganache may have a mat finish.

    Dip and decorate the cookies.

    • Hold one cookie in between your thumb and index finger.
    • Keeping the cookie flat, dip it into the chocolate ganache coating just the top surface of the cookie.
    • Lift the cookie out of the ganache and shake it several times until the excess ganache drips back into the bowl.
    • Turn the cookie over and set it on your work surface.
    • Immediately toss on your galaxy sprinkles.

    Galaxy Sprinkles

    I made my own galaxy sprinkles by combining the following:

    •  Sweet Tooth Fairy Blue Sprinkle Mix 
      • includes bright blue jimmies, blue and purple sugar pearls,  purple rock candy crystals, purple, and blue nonpareils
    • silver star sprinkles
    • white and silver nonpareils

    4. Dust your work surface with cocoa powder.
