A healthy breakfast fuels the brain, but sometimes it’s just hard to pull your kids away from the sugary cereals and breakfast pastries. So, make the choice easier for them by creating a fun breakfast sandwich topped with a freshly scrambled egg.
Simply adding a welcoming smile to an egg sandwich can be enough to excite young kids. They’ll be happily munching on their eggs, not even knowing they are getting 13 essential nutrients and 6 grams of high-quality protein. They’ll head out for school with alert minds and full bellies. Research shows that kids who eat breakfast have higher test scores, improved attendance and better class participation. Doesn’t that sound great?
You can feel good about making this back to school breakfast for your kids and it wont take more than a few extra minutes to make it fun.
Simply top a toasted English muffin or bagel with some cheese then add a scramble egg on top.
Cut two circles, about an inch in diameter, out of white cheese and two smaller circles out of a large black olive to make the eyes. You can use cookie cutters, a knife, or kitchen scissors to make your cuts.
Set the eyes near one edge of the egg sandwich then add a bacon smile.
At first, I used the full strip of bacon for the smile. I pinched it together into a curve then set it on the egg sandwich. It looks like a clown instead of a smiley face. But, that might make your kiddo happy too!
I ended up cutting the bacon smile in half lengthwise to make it thinner.
To make it easier, just cut the curved smile out of the slice of bacon. If your kid doesn’t like bacon, you can cut a smile out of orange cheese.
If your kid prefers sunny side up eggs, you can add a smile to that too. You can even make fun smiley face egg salad sandwich for lunch.
In my house we eat a lot of eggs. We live in the heart of egg country. In working with the Ohio Poultry Association on this project, I learned that Ohio is the 2nd largest egg farming state in the nation, producing more than 9 billion eggs each year. We are fortunate to get most of our eggs from a local farmer.
There is a good chance that the eggs you ate for breakfast today came from Ohio too. One of the largest egg farms in the country is in Mercer County, Ohio. You can even meet the Lochtefeld family and take a virtual tour of their egg farm.
