Mischievous little Reese's Cup Bunnies have been digging around in my Terra Cotta Pot Cupcakes looking for candy clay carrots. I can't be mad because these Reese's Cup Bunny Cupcakes are just so delightful and will make such darling desserts for Easter, a garden party, or an Earth Day celebration.
Have you ever gone out to your garden and found little bunnies enjoying a mid-morning snack? The rabbits that live in our backyard feast in my garden.
My furry garden buddies were the inspiration for these sweet carrot thief cupcakes.
Last year I made some really cute Easter Bunny Cupcakes using Milk Chocolate Reese's Peanut Butter Cups and they were such a huge hit that when I discovered White Reese's Cups earlier this year I just knew I had to make a new version of my bunny cupcakes.
Then I found these crazy cool silicone terra cotta pot baking cups made by Wilton (affiliate link) and couldn't resist having my bunnies popping out of a chocolate dirt-filled pot.
You bake the cupcakes right in the silicone pots. They look so real, are lightweight, and are easy to clean.
As I was designing these Carrot Thief Cupcakes, I started out wanting to keep the design really simple. The first bunny was made using a White Reese's Cup, as were the rest, but I used a Miniature Reese's Cup cut in half for the ears, ½ inch candy eyes, and a pink Sixlets nose. It just wasn't cute enough.
I really wanted the bunny to have long floppy ears, so for my second design, I used candy clay (modeling chocolate) to make some ears, which weren't quite long and floppy enough. I made his eyes bigger, put him in the pot, and added some little paws and a candy carrot. Better, but still not a showstopper.
I finally decided to get his features to look just right, I needed to shape them all out of candy clay. In the final design, the bunny's ears are perfectly floppy, his eyes couldn't be more expressive, his nose is as cute as a button (if buttons are actually cute) and he's snuggled in a silicone terra cotta pot that is filled with a decadent chocolate cupcake that is topped with chocolate ganache and chocolate cake crumb dirt. He's grasping onto the pot with his cute little candy clay paws and he's happy to have dug up a candy clay carrot.
He's so stinkin' cute! Don't you think?
So, let's see how you can make some of these darling bunny cupcakes.

Notes:
- The cupcake recipe below will fill one set of 12 silicone terra cotta pot baking cups. Pour the remaining batter into 4 cupcake liners. You'll crumble one of those cupcakes to make "dirt" for the terra cotta pot cupcakes and have three that you can snack on. If you purchase two sets of silicone baking cups then you can make 16 pots and use one of them to make "dirt."
- The chocolate ganache will firm up as it cools and will help to hold the Reese's Cup Bunnies in place.
- You will need to reshape your teardrop cookie cutters so that you can make long skinny ears. Just pinch them a bit so that they elongate.
- Be sure to make a nice thick pick of white candy melts for each Reese's Cup Bunny. The picks will hold the peanut butter cups upright in the terra cotta pot cupcakes.
- If you need to transport these cupcakes, I highly recommend inserting the bunnies, hands, and carrots once you reach your destination.

Recipe
Chocolate cupcakes baked in silicone terra cotta baking cups with Reese's Cup Bunnies popping out.
- ¼ cup unsalted butter, softened
- 1 cup 7 ounces sugar
- 2 ounces semi sweet chocolate, melted
- 2 large eggs, room temperature
- 2 large egg yolks, room temperature
- 9 tablespoons 4 ½ fluid ounces vegetable or canola oil
- 2 teaspoons vanilla extract
- ⅓ cup 2 ¾ ounce sour cream
- 1 cup all-purpose flour
- ½ teaspoon salt
- ½ teaspoon baking soda
- ½ cup 2 ounces cocoa powder
- ½ cup 4 fluid ounces room temperature water
- 12 ounces semi-sweet chocolate
- 1 cup heavy whipping cream, divided
- 12 White Reese's Cups
- 5 ounces creamy white modeling chocolate candy clay*
- 2 ounces bright pink candy clay
- 1 ounce bright white candy clay
- 1 ounce black candy clay
- 2 ounces orange candy clay
- 1 ounce green candy clay

- 6 ounces creamy white candy melts, melted or melted and tempered pure white chocolate

Preheat oven to 325 F.

In a medium-sized mixing bowl or the bowl of a stand mixer, mix butter and sugar until fully combined.

Add melted chocolate and beat until well mixed.

Mix in eggs and egg yolks one at a time until just combined.

Mix in oil, vanilla, and sour cream until just combined.

Sift together flour, salt, baking soda, and cocoa powder together then mix into wet ingredients in three increments.

Mix in water until just combined.

Fill silicone mold with 5 tablespoons of batter.

Equally divide remaining batter in 4 cupcake liners.

Bake for 18-24 minutes until a toothpick inserted into the center of a cupcake comes out clean.

Remove and allow to cool completely.

Remove about an inch or so of cake from the center of each terra cotta cupcake by using a cupcake corer or knife.

Crumble the removed cake pieces along with one of the cupcakes. Set aside.

Combine chocolate with ¾ cup heavy whipping cream.
-
Heat on high power in the microwave for 1 minute 15 seconds.
-
Let chocolate rest in microwave for 2 minutes.

Remove and stir until melted.
-
If needed, heat for 10-15 more seconds.

Pour in remaining whipping cream and stir until smooth.

Pour warm ganache over top of one of the terra cotta cakes then sprinkle cake crumbs over top.

Repeat covering all the terra cotta cupcakes.

Use the remaining ganache to frost the plain cupcakes and enjoy a snack.

Unwrap White Reese's Cups and set aside.
-
Roll out creamy white, pink, bright white and black candy clay.
-
Cut out twenty four 2 ½ inch long tear drop shaped creamy white ears.
-
Cut out twenty four 1 ¾ inch long tear drop shaped pink ears.
-
Brush a dab of water on a pink ear and set the wet side on the white ear, centering the pink part.
-
Repeat creating 24 ears.
-
Cut out twenty four ½ inch bright white circles and ⅜ inch black circles.
-
Brush one side of a white circle with water and set the wet side down on the Reese's Cup situated where you'd want your Bunny's eyes.
-
Press down on the white candy clay smoothing it out and making it a bit larger.
-
Repeat, adding the second white circle right next to the first.
-
Attach two black pupils to the whites using a very small amount of water.
-
Continue adding eyes to all your Reese's Cups.
-
Pinch off a small piece of pink candy clay and shape it into a nose.
-
Attach under the eyes using a dab of water.
-
Set the points of the bunny ears together on a parchment paper lined baking sheet.
-
Pour a small amount of white candy melts over the tips of the ears then continue adding a 2 ½ inch line of candy melts straight down from the ear forming a pick that will go into the cupcakes.
-
Set the Reese's cup on the wet candy so that the bunny faces the correct direction.
-
Freeze for 5 minutes until the candy melts harden.
-
Remove from freezer and let sit at room temperature for 10 minutes.
-
Bend one ear a little bit then flip the bunny over.
-
Brush candy melts over the back of the bunny's ears, head, and pick to give it more stability.
-
Let the candy melts dry.
-
Pinch off small pieces of orange candy clay and shape them into carrots.
-
Poke a hole in the larger end of the carrot.
-
Roll tiny pieces of green candy clay into carrot shapes as well.
-
Brush some water on the pointed end and insert it into the hole in the orange carrot.
-
Flatten out the green candy melts, then make indentations using a sharp knife so that the green candy looks like carrot greens.
-
Use the back of the knife to create grooves around the carrot.
-
Pinch off small pieces of creamy white candy clay and roll them into 24 balls.
-
Cut a slit halfway through each ball.
-
Insert a Reese's Cup Bunny into a terra cotta pot cupcake.
-
Place a white ball of candy clay so that the slit goes over the edge of the silicone terra cotta pot forming one bunny paw. Add a second paw.
-
Poke a hole in the cupcake and insert the tip of a carrot in front of the bunny.
