Here’s another fun way to serve hard boiled eggs for Easter. These Hard Boiled Egg Carrots are fun and super easy to make.
I’ve been having way too much fun creating edible crafts using eggs this Easter.
Hard Boiled Egg Carrots
yellow and red liquid food coloring*
optional, brown food coloring marker
* If you are opposed to using food coloring, you can find all natural yellow and red coloring at health food stores or on-line.
To make easy to peel hard boiled eggs, it’s best to use older eggs. I try to buy eggs a few weeks before I’m going to use them to make hard boiled eggs.
Arrange your eggs in a pot and pour cold water over top until it measures 1 inch above the top of the eggs.
Heat on medium-high heat just until the water starts to boil. Small bubbles will become large and the eggs will begin to dance around the pan just a bit as it comes to a boil.
Remove from the heat and cover with a tight fitting lid.
Keep covered for 17 minutes. If your water has come to a rip roaring boil, you’ll only want to keep the eggs covered for about 12 minutes.
Remove lid and drain off the hot water.
Fill pan with cold water. Drain that cold water then fill the pan with ice water. Let the eggs sit in the ice water for 15 minutes in order to cool the eggs completely.
For best results, refrigerate the eggs overnight before peeling.
Crack both ends of the egg shell then peel under running water.
Fill a glass or cup with water. Add yellow and red food coloring until you get a nice bright orange. To test the color, dip a paper towel in the water.
Set one egg at a time in the glass of water. Allow the egg to sit for about 5 minutes, rotating the egg midway through, so that the entire egg turns orange.
Remove the egg from the orange water bath using a spoon and set the egg on a few layers of paper towels to drain.
To decorate, poke a few small sprigs of parsley in the fat end of each egg.
You can serve the carrots as is, or use a brown food coloring marker to draw on some lines to give them a more realistic look.
Serve immediately or refrigerate for up to a few hours. The color will fade over time, so it’s best to make them no more than a few hours before serving.
