Eggnog Snowflake Cake Topped with Eggnog Ganache

On this incredibly chilly winter morning, I'm enjoying a piece of Eggnog Snowflake Cake. Yes, I eat cake for breakfast. Don't you?

The forecast was calling for several snow showers in our area this week, but the 6 inches we got on Monday night has, so far, been the extent of it. Looking out my window onto the open expanse of glistening white snow put me in the mood to bake this cake.

I had actually planned to make this for Christmas, but I am glad I waited. We had more than enough treats at our Christmas celebration and it feels more appropriate to make this now that we have a blanket of snow covering everything around us.

Do you still have some eggnog in your refrigerator? I had a full un-opened carton, which I put to good use in this cake. I started with a box of Betty Crocker Pound Cake Mix which I doctored up with the eggnog. I topped the cake with a bright white eggnog glaze and a sprinkling of powdered sugar.

This cake couldn’t be simpler to make or decorate, yet looks pretty striking. Not quite as striking as this cake, however …

Gingerbread Snowflake Cake

Isn’t that Snowflake Gingerbread Cake gorgeous? I fell in love with it the first time I saw it. Marilyn from Pink Martini and Pearls created that beauty. Marilyn is an incredibly talented blogger who is going to be one of my new contributors here at Hungry Happenings, and I couldn’t be happier to have her on board. Eggnog Pound Cake Snowflake with Eggnog Ganache

Ingredients:

Eggnog Pound Cake- (recipe adapted, from My Recipes)
1 Betty Crocker Pound Cake Mix
1 1/4 cups eggnog
2 eggs
1 teaspoon pure vanilla extract
1/4 teaspoon freshly ground nutmeg
optional, 1 teaspoon rum extract

Eggnog Ganache-
1   10-ounce bag Wilton Bright White Candy Melts*
1/2 cup eggnog
1 teaspoon light corn syrup

Decoration-
a sprinkling of powdered sugar

*If you want a really intense eggnog flavor use Wilton’s Egg Nog Candy Melts instead of the Bright White Candy Melts. I made both and absolutely loved the intense eggnog version. Unfortunately, it makes a cream-colored ganache and I wanted a pretty white snowflake, so I opted for the bright white candy melts.

Supplies:

Wilton Snowflake Cake Pan
Cake Release or non-stick spray
cooling rack
cake leveler or serrated knife
cake lifter or oven/pizza spatula

Instructions:

Wilton Snowflake Cake Pan

Preheat oven to 350 degrees.

Brush the snowflake cake pan with Cake Release or spray with non-stick spray.

Easy Eggnog Pound Cake Recipe using Betty Crocker Pound Cake Mix | HungryHappenings.com

Mix eggnog pound cake ingredients together using an electric mixer set on low speed for 30 seconds. Increase speed to medium and mix for 2 minutes. Pour into snowflake pan.

Snowflake Cake

Bake for 30-34 minutes until a toothpick inserted in the center of the cake comes out clean.

Cool cake in pan for 10 minutes, then turn it out onto a cooling rack. Cool completely.

How to make a snowflake cake.

The cake will have domed, so level the cake using either a cake leveler or a serrated knife.

The bottom cake also makes a nice snowflake. Just cut out the holes in the snowflake and make glaze to frost it as well.

Bright White Eggnog Ganache

To make bright white ganache, combine Wilton’s Bright White Candy Melts with eggnog and corn syrup. Microwave on high for 30-second increments, stirring after each until melted.

Set the cooling rack over a piece of parchment paper.

Allow the ganache to thicken for about 30-45 minutes then pour over the cake. You want it thin enough to pour, but thick enough that it will coat the cake nicely. I poured mine before it was thick enough and had to scrape it up and add a second coat.

Glazes Snowflake Cake with Powdered Sugar on Top

While the cake is still on the cooling rack, sprinkle powdered sugar over top. I had a mess on my cake board and had to move the cake again.

You’ll need a large oven & pizza spatula or cake lifter to move your cake. I use my oven spatula all the time, for cakes, lifting pizzas. moving cheesecakes and more. It’s a great tool.

Being I had to move the snowflake off the cake board, I decided to put it on a clear plate to take pictures. It looked better.

I wish I would have taken a picture of the other half of the cake which I glazed with the ganache made using the Eggnog Candy Melts, but I was too eager to cut into it to taste it, and before I knew it a big chunk had been eaten. Oh, well It happens. It is cool that you essentially get two cakes out of this recipe. The other one is thin compared to this one, but it looks just as pretty.

    I just love this and I think I have this pan. If not, I want this pan! And, I even purchased those eggnog candy melts, now I know what to do with them, I bet I could use them in place of the white, right?

      I definitely preferred the taste of the glaze made with the eggnog candy melts because I love eggnog. The bright white glaze was much prettier though, so it's a toss up as to which I really preferred.

    Breakfast is my favourite time to eat a slice of cake too! This eggnog cake just looks SO delicious and I have to get my hands on one of those snowflake pans – never seen them before!
