This Christmas, decorate fudge-covered OREO cookies to look like cute gingerbread men. These sweet treats are easier to make than homemade cookies and will look adorable on your Christmas cookie trays.

If you don't like to fuss with making cookie dough, rolling it out, and cutting it using cookie cutters, make these gingerbread OREOs instead.
In just minutes, you can turn a chocolate Fudge Covered OREO Cookie into a cute gingerbread man using white candy melts (or almond bark), pink confetti sprinkles, candy eyes, and a food coloring maker.
I'll show you how to decorate these cookies below. It's easy!

Let's make some OREO gingerbread men.

Ingredients
- Chocolate Fudge Covered OREO Cookies - If you can't find these cookies, follow my Backside Black Cat Cookies post instructions to dip the cookies into candy melts (or chocolate).
- White Candy Melts, melting wafers, or almond bark - You'll use this to create a stitched border around each OREO.
- Candy Eyes: I used ⅜-inch royal icing eyes.
- Pink Confetti Sprinkles - These small, flat, round sprinkles make cute cheeks.
- Black Food Coloring Marker - Using a food coloring marker to make the gingerbread man smiles is easy but you can also pipe on black candy melts if you prefer.
Supplies
- sharp knife: You'll use this to shave excess chocolate off around your OREO Cookies.
- microwave: safe bowl or double boiler: Use either to melt the white candy melts.
- toothpick: It's easy to create the stitched edge around the OREO cookie using a toothpick. You could use a paintbrush too.
Instructions
Let's get crafting!

Shave off the excess chocolate around the OREO.
Hold onto the edge of your Fudge Covered OREO and run a sharp knife around the outer edge to remove any excess chocolate.
If your OREOS are smudges on top or white, gently run the palm of your hand over the top to smooth it out.

You can dip OREOs in chocolate instead.
Alternatively, you can dip an OREO Cookie into melted light cocoa candy melts or almond bark instead of using the store-bought Fudge Covered OREOS. See my Backside Black Cat Cookies (dipped in black candy melts) for dipping instructions.
You could also use pure milk chocolate but that chocolate will need to be tempered (heated and cooled to exact temperatures) in order to harden properly. Check out my Chocolate Making Tips page for instructions.

Melt the candy melts (almond bark).
Melt a small bowl of white candy melts, white almond bark, or white melting wafers in the microwave or using a double boiler on the stove.
To melt the white chocolate in the microwave, place the chocolate wafers (or chop almond bark into small pieces). Heat on high power for 15-second increments, stirring after each, until melted.
Alternatively, you can melt the white chocolate on the stove using a double boiler. To make one, fill a small saucepan with 1 inch of water and set it on the stove over low heat. Set a snug-fitting bowl on top of the pan. Pour your candy melt wafers or chopped almond bark into the bowl and allow the chocolate to melt slowly, stirring often.
Substitutions
You can use Nestle Premier White Morsels as they are similar to white candy melts (made with palm kernel oil instead of cocoa butter). If you use pure white chocolate chips made with cocoa butter, you must temper the chocolate so that it will harden properly.
If you prefer, you can use royal icing or cookie icing to decorate the gingerbread men.

Add white stitches.
Dip a toothpick into the melted white candy melts. Dab it on the cookie, into ¼-inch stitches, around the outer edge of the OREO. Leave a small space in between each stitch.
Each of my gingerbread men had 12-14 stitches.

Add a smile and rosy cheeks.
Draw a smile on the gingerbread man using a black food coloring maker. If you have any trouble with the marker drying out or drawing on your cookies, check out my "How to Use Food Coloring Markers" post for tips.
I found it easiest to get the best curve for my smiles by turning the OREOs upside down.
Dab a small drop of white candy melts at each end of the smile and top with a pink confetti sprinkle to create rosy cheeks for your gingerbread men.

Add these cute cookies to your cookie trays. If you aren't into baking, they'd be a great cookie to bring to a Christmas Cookie Exchange.

Decorate Fudge Covered OREO cookies to look like adorably cute gingerbread men. They are a fun treat to serve on your Christmas cookie platters.
- 12 Fudge Covered OREO Cookies
- 2 ounces white candy melts, white almond bark, or melting wafers
- 24 candy eyes
- 24 pink confetti sprinkles

Use a sharp knife to cut any excess chocolate off around the edge of the OREO Cookies.

Melt the white candy melts in the microwave on high power for 15-second increments, stirring after each until melted.

Or create a double boiler by adding 1 inch of water in a small saucepan. Set a snug-fitting bowl into the pan so that it doesn't touch the water. Pour the white candy melts into the bowl and allow the chocolate to melt, stirring often until smooth.

Dip a toothpick into the melted white chocolate. Dab it into a short line, about ¼-inch long, around the curve of the edge of an OREO. Add another line about ⅛-inch from the first. Continue adding white lines all around the outer edge of the top of the OREO Cookie to create a stitched border.

Attach two candy eyes using the melted candy melts.

Draw on a smile using a black food coloring marker then add a dot of white candy melts on each end of the smile. Top the dots with pink confetti sprinkles.

Let the candy melts dry for about 15 minutes. You can pop the cookies into the freezer for about 3 minutes until the candy hardens.

Serve and enjoy!
Store your OREO Gingerbread Men at room temperature for up to a month (or up to the best-buy date listed on your box of OREOs). If you store them in an airtight container, they'll stay fresh longer than if you just cover them with plastic wrap.
