Cooler Cake

This red Cooler Cake looks almost like the real deal! With isomalt ice cubes and shiny modeling chocolate beer bottles, this is the perfect dessert for any tailgating party.

Cooler Cake

It’s tailgating season, and for those of you who pack up your trunks full of food, head off to the football game, hang out in the parking lot, and party before the kick-off, this Cooler Cake is for you.

With its simple rectangle shape, it’s easily transportable and it’s the perfect size to feed up to 16 hungry fans.

how to make cooler cake

I made this cooler cake the size of a personal cooler, but the same idea could be used to make a very large cake. To make this cake I baked two 9×13 cakes, cut them in half, stacked them with frosting in between, then wrapped them in red frosting.

I added a white fondant rim, tossed in some isomalt ice cubes, and hand-sculpted modeling chocolate bottles.

I love this cake as usual. Is there no limit to what you can do. Only one problem, you lost me with the ice cubes. What are they made of and where do I get them? Thanks as always. Still Queen. Trish Butler

I used Isomalt nibs as the ice cubes. Isomalt is a sugar substitute that is crystal clear and it comes in powder, sticks or nibs, and the nibs just happen to look quite a lot like ice cubes which was perfect for my cooler cake.
