Three-Cheese Calzone Pumpkins

I’m working on the menu for our Halloween party, and have been experimenting with new recipes. My favorite so far are these Three Cheese Calzone Pumpkins made with
Krusteaz new Italian Herb Flat Bread.

The box of flatbread mix was just one of the many new products I got to bring home from the International Food Bloggers Conference last month. Although getting enough swag to fill my carry on bag was cool, and spending time with my blogging buddies, even better, the point of attending one of these blogging conferences is to learn new things. Most sessions are all about the business of blogging, and I learned a lot, but one of my favorite sessions was not about business at all, but about throwing great parties.

 

 

Now that’s right up my alley. I spent a relaxing hour watching as Krusteaz’s Culinary Specialist Malia Hasegawa and party guru Jennifer Sbranti from the Hostess with the Mostess shared tips on decorating for a party and created several mouth watering recipes.
A few of these recipes were made using Krusteaz new flatbread mixes, and being we had been given a box of the Italian Herb mix in our swag, I was excited to see what they created using this product. As they worked on stage, my mind raced with recipe ideas. I tried to focus on what they were doing, but I just couldn’t stop imagining the edible crafts I could make using this mix.

Yesterday, I finally found time to try out my idea and made a batch of Three Cheese Calzone Pumpkins. After I opened the box of flatbread mix, I could tell just by smelling the amazing aroma of Italian herbs that the flatbread was going to be very flavorful, so I decided to keep my calzone filling simple. I just used really fresh ricotta, mozzarella and Parmigiano Reggiano cheese and a little pizza sauce. When they came out of the oven, I couldn’t stop eating them and neither could the friends who had stopped by. Thankfully, I managed to hold onto a few so I could snap some pictures.
Everyone loved the herbs in the flatbread, and we all thought the three cheese filling was perfect, but, that doesn’t mean I wont try other fillings next time. I’m thinking artichokes, sun-dried tomatoes, roasted red peppers, and kalamata olives. Ooh, that sounds good. I need to go get another box of Krusteaz Italian Herb Flatbread Mix.

Three Cheese Calzone Pumpkins

Ingredients: (makes 18)

1 Box Krusteaz Italian Herb Flatbread Mix
1 cup warm water (115-125 degrees F)
1/4 cup vegetable oil
1 cup ricotta cheese
1 1/2 cup freshly shredded mozzarella cheese
1/4 cup freshly grated Parmesan cheese
pinch of salt
1 egg
3/4 cup pizza sauce

Supplies:

3 silicone pumpkin molds (each with 6 cavities)

Instructions:

Stir together the Krusteaz Italian Herb Flat Bread Mix with the packet of yeast that is enclosed.

Stir in the warm water and vegetable oil until the dough forms a ball.

Cover with plastic wrap and let sit for 25 minutes.

 

Meanwhile, preheat oven to 350 degrees.
Make the calzone filling by stirring together the ricotta, mozzarella, Parmesan, salt and egg.
When the dough is ready, wet your fingers then pinch off heaping tablespoon sized pieces of dough, and press into each pumpkin cavity in the silicone mold. Fill all 18 cavities.
Spoon 1 tablespoon of pizza sauce into each pumpkin cavity. Equally divide the three cheese calzone mixture among pumpkins.
Divide remaining dough into 18 pieces. With wet fingers, flatten a piece of dough out and press over the calzone filling. Pinch the edges together to seal. Repeat.

 

 

Bake for 18-20 minutes until golden brown on top. Pop the calzones out of the molds and place them on a baking sheet with the browned side down. Continue to bake for 4-8 minutes until the tops brown. If needed, you can even turn the pumpkins on their sides to continue to brown them.
Sorry I missed taking pictures of this step. My unexpected guests distracted me.
Remove the Calzone Pumpkins from the oven and serve hot.
I received a free box of Krusteaz Flatbread Mix at the IFBC, and chose to use it to make this Halloween recipe because I was excited to try it. I really did love the flavor and can’t wait until they start selling it in stores near me, which will hopefully be soon.
