For Halloween, serve these hearty Three-Cheese Calzone Pumpkins for dinner or as an appetizer. Each pumpkin-shaped pizza crust is filled with pizza sauce and a variety of cheese.
I'm working on the menu for our Halloween Pumpkin Carving Party, and have been experimenting with new recipes. My favorite Halloween recipe so far is for these Three Cheese Calzone Pumpkins made with Krusteaz Italian Herb Flatbread Mix.
After I opened the box of flatbread mix, I could tell just by smelling the amazing aroma of Italian herbs that the flatbread was going to be very flavorful, so I decided to keep my calzone filling simple. I just used really fresh ricotta, mozzarella, Parmigiano Reggiano cheese, and a little pizza sauce.
When they came out of the oven, I couldn't stop eating them and neither could the friends who had stopped by. Thankfully, I managed to hold onto a few so I could snap some pictures.
Ingredients

Krusteaz Italian Herb Flatbread Mix
warm water (115-125 degrees F)
vegetable oil
ricotta cheese
freshly shredded mozzarella cheese
freshly grated Parmesan cheese
pinch of salt
egg
cup pizza sauce
Supplies:
3 silicone pumpkin molds (each with 6 cavities)

Instructions:
Stir together the Krusteaz Italian Herb Flat Bread Mix with the packet of yeast that is enclosed.
Stir in the warm water and vegetable oil until the dough forms a ball.
Cover with plastic wrap and let sit for 25 minutes.
Meanwhile, preheat the oven to 350 degrees.
Make the calzone filling by stirring together the ricotta, mozzarella, Parmesan, salt, and egg.
When the dough is ready, wet your fingers then pinch off heaping tablespoon-sized pieces of dough, and press into each pumpkin cavity in the silicone mold. Fill all 18 cavities.
Spoon 1 tablespoon of pizza sauce into each pumpkin cavity. Equally divide the three cheese calzone mixture among pumpkins.
Divide the remaining dough into 18 pieces. With wet fingers, flatten a piece of dough out and press over the calzone filling. Pinch the edges together to seal.
Repeat.
Bake for 18-20 minutes until golden brown on top. Pop the calzones out of the molds and place them on a baking sheet with the browned side down. Continue to bake for 4-8 minutes until the tops brown. If needed, you can even turn the pumpkins on their sides to continue to brown them.

Remove the Calzone Pumpkins from the oven and serve hot.
Variations
You can fill your calzones with your favorite pizza toppings. Just be sure to leave room to cover the pumpkin-shaped calzones with more pizza dough.

Substitutions
If you can't find the Krusteaz Flat Bread mix, you can use store-bought or homemade pizza dough instead. You could also use Biscuit Mix or cans of biscuits.
