Transform a plain store bought cookie into a festive little treat! Make these Nutter Butter Polar Bear Cookies and your guests will be growling for you to whip up another batch!
Once again, a simple peanut shaped Nutter Butter Cookie has found it's way onto my blog. Every time I look at a Nutter Butter, I can't help but envision it as an edible craft - and then I eat it. A few cookies do actually survive to become penguins, skulls, puppies, fuzzy pink slippers, or in this case, polar bears.
Nutter Butter Polar BearsBefore you begin, read my Chocolate Making Tips page if you don't have experience melting and working with candy coating or chocolate.
You'll need:
2 mini marshmallows per polar bear
melted white confectionery coating/candy melts or melted and tempered pure white chocolate
Nutter Butter Cookies
2 mini chocolate chips per polar bear
1 large chocolate chip per polar bear*
black food coloring marker
*You need a chip that is about ½ inch in diameter, which is larger than a standard size chip.
I used Kroger's Private Selection Brand Semi Sweet Chips,
but Callebaut Chocolate Callets are also the perfect size.
Supplies:
kitchen shears (scissors) or a knife
candy dipping fork or kitchen fork
parchment paper cut into small squares set on a plate or baking sheet
Instructions:
Flatten two mini marshmallows into a circle. Use kitchen shears or a knife to cut off a small piece from one edge so that you can attach the marshmallows to your Nutter Butter.
Dip the cut end of the marshmallow into the melted white confectionery coating.
Press one on each side of the top half of a Nutter Butter Cookie to create the polar bear's ears.
Allow the candy coating to dry.
Dip the Nutter Butter Cookie into the melted white candy coating, completely submerging it. Use a dipping fork or a kitchen fork to lift the Nutter Butter up out of the white confectionery coating. Allow excess coating to drip off.
Set the dipped cookie on parchment paper.
Immediately while the coating is still wet, press two mini chocolate chips on the cookie for the eyes and one large chocolate chip for the nose.
Freeze for 5 minutes until the candy coating is set. If using pure white chocolate refrigerate instead.
Allow cookie to come to room temperature, then use a food coloring marker to draw on a mouth and eye brows.
Tips: If you are dipping your Nutter Butter Cookies into white confectionery coating, in order to get nice shiny looking polar bears you'll want to dip one, decorate it, then place it in the freezer. If you leave your dipped cookies out at room temperature for too long they will develop streaks and spots. If you use small squares of parchment paper set on plates or baking sheets you can easily put your cookies in the freezer as you finish decorating each one.
Store your Nutter Butter Polar Bears in an airtight container for up to several weeks. Do not store in the refrigerator or freezer.
