These cute Ghost Lollipops have eyes that actually wiggle. They are so much fun. Kids will love them!
I had a blast watching my friend's kids react to these cute Halloween treats. The kids giggled and squealed as they shook their googly-eyed ghosts. They couldn't believe the edible googly eyes actually wiggled.
They had so much fun playing with the ghosts but eventually, they all took a bite and were surprised to find a Rice Krispie Treat hiding inside a soft and chewy white chocolate ghost.
Each ghost is made with white modeling chocolate draped over a Rice Krispie Treat. What's not to love?
These sweet ghosts would look great as cupcake toppers and would make a great addition to a graveyard cake, a scary forest cake, or a gingerbread haunted house, but they just as special as an individual little treat.
Rice krispies treat pops draped with white modeling chocolate and decorated with edible googly eyes.
Caution: Although the googly eyes are edible, they may pose a choking hazard for young children, so I recommend allowing the kids to have fun wiggling the eyes around then remove them before the kids eat the pops.
Before you begin: You will need to make a batch of white modeling chocolate, using 16 ounces of white chocolate (or confectionery coating/candy melts) and ⅓+ cup light corn syrup.

Googly Eye Ghosts
Ingredients
Rice Krispies Treats - You can use store-bought or homemade Rice Krispie Treats. Head on over to my new website, HowToMakeRiceKrispies.com to see the absolute BEST Rice Krispie Treat Recipe.
powdered sugar, for dusting work surface
gelatin caps (I used size "0") - Buy the clear gelatin capsules at health foods stores or use the link to purchase the capsules from Amazon. I earn a small commission when you make a purchase using the link at no extra cost to you.

black edible food marker
Supplies
rolling pin
4 ½" round cookie cutter
4" or 6" lollipop sticks
Instructions
Cut modeling chocolate circles.
To make your modeling chocolate rounds: dust a cutting board lightly with powdered sugar. Or use a silicone mat instead. You don't need to use powdered sugar.
Roll out some white modeling chocolate to no more than 1/16th of an inch thick.
Cut out circles using a 4 ½" round cookie cutter.
Drape white modeling chocolate over Rice Krispie Treat balls.
Cut each rice krispies treat in thirds widthwise.
Roll each piece of cereal treat into a ball and insert a lollipop stick into each ball.
Drape one round of modeling chocolate over each pop.
Tips
I thought about leaving the draped modeling chocolate to hang loose but decided that in order to keep the rice krispies treat fresher, it would be best to gather the modeling chocolate around the stick, pinching it together gently but still allowing a nice drape.
Add edible googly eyes.
To make the edible googly eyes: separate the two halves of the gelatin capsules.
Use the smaller side of each cap for each eye saving the large side for another use or just dispose of them.
Place one black edible pearl into a gel cap and press the gel cap into the face of a ghost, leaving enough room so that the black pearl can wiggle around.
Repeat adding a second eye.
Add a mouth.
If you'd like mouths on the ghosts, use an edible black marker to draw on mouths.
Storage
Wrap each googly-eyed ghost in a clear cellophane bag to hand out as treats. Keep stored in an airtight container for several weeks.
Variations
If you don't want to add googly eyes, you could color some of the modeling chocolate to use for the eyes and mouths or use mini chocolate chips.

- 18 ounces white modeling chocolate
- 6 Rice Krispies Treats
- 36 size 0 gelatin capsules

Roll out the white modeling chocolate to 1/16-inch thickness on a lightly powdered-sugar dusted cutting board or a silicone mat.

Cut out circles using a 4 ½" round cookie cutter.

Cut each rice krispies treat in thirds widthwise.

Roll each piece of cereal treat into a ball and insert a lollipop stick into each ball.

Drape one round of modeling chocolate over each pop pinching it around the stick at the base of the Rice Krispie treat.

To make the edible googly eyes, separate the two halves of the gelatin capsules discard the small half.

Insert a black sugar pearl into the larger half of a gel cap and press the gel cap into the face of a ghost, leaving enough room so that the black pearl can wiggle around.

Store your white chocolate Rice Krispie Treat Ghost Lollipops in an airtight container for up to a week.
