A few years ago, I created my very first wedding cake cheese ball, pictured above, and had an incredibly enthusiastic response to the recipe. This bridal shower appetizer is even going to be featured in an upcoming issue of Woman’s World Magazine and was listed on Glamour Magazine’s website as one of the Most Genius Wedding Ideas of the Week.
I’ve been meaning to re-visit this edible craft idea for a while now, and finally got inspired when I was asked to demonstrate the project on my local Fox television morning show.
I had so many decorating ideas, that it was hard to choose just one, so I decided to share several different ways to transform a plain cheese ball into a beautiful appetizer that can be served at a wedding shower or reception. Some of these cakes would also be a nice addition to a Mother’s Day or birthday celebration.
The cake, pictured above, is really simple to create. Once you use the directions, found here, to create the basic wedding cake, you can use fresh dill and a few roses to decorate it. I simply laid some dill around the cake and added a few very small roses to add some color. If you can find organic roses that have been grown without pesticides, they can be attached directly to the cheese ball cake. I didn’t, so I just washed them gently, and set them next to the cake.
I tried out a few different kinds of fresh herbs, including rosemary. My first attempt looked very earthy and a bit silly. I wasn’t sure I liked it, so I tried something else.
This one is better, don’t you think? The flowers I used are called Wax Flowers. I would have loved to use them on the cake, but they aren’t organic either. Next time I make these cheese ball cakes, I’m going to search for organic flowers. I think the cake would look really beautiful with flowers cascading down the tiers.I figured if I couldn’t use real flowers, I could at least create them out of food.
That’s exactly what I did for my favorite of all the wedding cakes. I cut daisies out of mozzarella cheese and attached them to the cake to create a visually stunning cheese ball. I love it, don’t you?In the process of making these cakes, I also tried out a new few cheese ball recipes, which I’ve shared in the tutorial. The recipe I used for the daisy cake has some apricot/peach preserves in it which gives it a nice peach color. The daisies pop against the soft color of the cheese ball. It wasn’t my favorite of the three recipes, but I do like how it looks. If you are a big fan of Camembert cheese, you’ll probably love it. I prefer the Roasted Garlic Parmesan Cheese Ball, myself.
Wedding Cake Cheese Ball
Decorated with Mozzarella Cheese Daisies
You’ll Need:
1 wedding cake cheese ball, using the directions found here (see recipe options below)
7-9 slices white cheese (ex: Mozzarella, Havarti, Provolone)
yellow food coloring
small daisy cutter or plunger cutter
small round cutter or plunger cutter
1-2 tablespoons cream cheese
food use only paint brush or pastry brush
optional: pastry bag
Recipes:
White Cheddar Cheese Ball
2 -8 ounce packages Philadelphia cream cheese
8 ounces aged white cheddar, shredded (2 cups)
4 ounces Monterey Jack Cheese, shredded (1 cup)
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon salt
Combine all ingredients and mix using a stand mixer, a hand mixer, a food processor, or large spoon.
Camembert Cheese Ball (recipe adapted from Midwest Living)
2 – 8 ounce packages cream cheese
8 ounces Camembert Cheese, rind removed
4 ounces Swiss Cheese, shredded (1 cup)
4 ounces aged Asiago Cheese, shredded (1 cup)
2 tablespoons butter
1/4 cup white wine
1/4 cup apricot/peach preserves
1/4 teaspoon salt
Combine all ingredients and mix using a stand mixer, a hand mixer, a food processor, or large spoon.
Roasted Garlic Parmesan Cheese Ball
1 whole head (bulb) of garlic
1 teaspoon olive oil
2/3 cup blanched and slivered almonds
2 – 8 ounce blocks of cream cheese, softened
3/4 cup freshly grated Parmigiano-Reggiano Cheese (or freshly grated Parmesan)
pinch of salt
optional: pinch of white pepper (don’t use black)

Decorating Instructions:
Cut about 50 daisies out of slices of white cheese using a cookie cutter or a plunger cutter. Brush yellow food coloring over two slices of cheese. Allow the food coloring to dry. Use a small round cutter or plunger cutter to create yellow stamens for each daisy. Attach the yellow stamens to the daisies using a small dab of cream cheese.
Attach the daisies to the cake using a dab of cream cheese. I filled a pastry bag with cream cheese and attached a small round tip, then piped the cream cheese onto the back side of each daisy, then pressed them onto the cake. You can also just use a knife or spatula to do this.You could have the daisies cascading down the cake or just circle each cake layer with the daisies, like I did.
Lovely, isn’t it? Serve your cheese ball with crackers and see the surprised looks on your shower guests faces when they realize it’s an appetizer, not a dessert.
You can make this cake, several days ahead of time, just keep it covered and in the refrigerator until your party guest arrive.

This is a BRILLIANT idea, I am SO glad I found this. This is impressive enough to be used when catering an event. I don’t know who actually came up with this idea but if you did, then this is genius. What makes it REALLY nice is that it can be prepared in advance which is SO nice when entertaining or preparing for a function.

It of course will depend on how much other food you have, but I’ve served these at parties with 20 or more guests and had a small amount of the cheese ball left over.
