I hosted a Krispies Kreations party for a few friends last month and surprised them with these Cafe Mocha Rice Krispie Treat Cups! They are adorable and delicious, the best of both worlds!
Most of my friends have grown children and being many of them don't work outside the home they are finding they now have lots of free time to do fun things.
I don't have much free time, but even when I'm working, I'm usually doing fun things.
On occasion, my friends like to stop by and hang out with me while I'm working (doing those fun things) and when they stopped by last month, I had a surprise for them.
Usually, they show up to find my kitchen a total disaster, me in my yoga pants with my hair pulled up on top of my head, and everything in disarray. This time, I was dressed, hair done, makeup on, and the kitchen was clean and tidy.
They walked in and saw a table set with pretty flowers, bowls of colorful M&M's candies, and coffee mugs that I made from Rice Krispies Treats bars.
I created a backdrop on my black table using a large black chalkboard. My house is filled with black and I just love how bright colors seem even brighter when set against a black backdrop.
The table didn't need to be fussy as were just having a casual get together, but when it all came together, it looked pretty striking.
I had the ingredients set out so that they could make and decorate their own candy saucer. Once those were finished we brewed some fresh coffee which we used to make chocolate ganache to fill our Rice Krispies Treat mugs.
We also made some plain chocolate fondue and cut Rice Krispies Treat bars into bite size pieces to use for dipping.
It is always lovely to spend an afternoon with friends just relaxing, having fun, and eating snacks. Below I'll show you how to make your own Cafe Mocha Rice Krispie Treat cups to share with your friends.
These treats would be great to serve at a ladies' luncheon, a Mother's Day brunch, or a book club meeting.

How to Make Cafe Mocha Rice Krispie Treat Cups

Our homemade treats are really soft and chewy so I recommend adding some white chocolate or candy melts to make a slightly firmer treat that will hold its shape really well. Use the recipe I used to create Rice Krispie Treat Pumpkins.
Once you have made the treats, just cut them into rectangles and follow the steps below:
Rice Krispies Treat Cups -
Unwrap 3 Rice Krispies Treat Bars.
Use a rolling pin or your fingers to flatten each bar out to a 3 ¼ inch by 2-inch rectangle.
Curve each rectangle then press and pinch the short ends of two of the treats together creating a 6 ½ inch by 2-inch curved rectangle. Continue to curve the two treats into a 2-inch tall cylinder and press the other ends together.
Set the Rice Krispies Treat cylinder on top of a third flattened treat.
Use a knife to cut the third treat out in a circle around the base of the cylinder.
Reserve the scraps to create your cup handles. Press the scraps together, roll into a log, then shape into a curved handle.
Repeat creating a total of 8 cups and 8 handles.
Place the white confectionery (candy) coating in a microwave-safe bowl. Heat on high power for 20-30 second increments, stirring after each, until melted.
Use a pastry brush or food use only paintbrush to brush a layer of confectionery coating all around the inside of each Rice Krispies Treat cup.
Allow the candy coating to dry for about 10 minutes.
Use a small amount of the candy coating to attach a handle to each cup.
M&M's Candy Saucers -
Spoon a heaping tablespoonful of white candy coating onto a parchment paper-lined baking sheet. Spread it into a 3 ¼ inch circle (for a nice uniform looking circle, spoon it into a round metal cookie cutter.)
Immediately while the candy coating is wet, arrange two colors of M&M's in a single row around the edge of the circle. Create four circles using Plain M&M's and four using Peanut Butter M&M's, or combine them together.
Freeze the candy 8 minutes until candy coating hardens. If using the metal cutters, simply pop the candy out once it's hardened.
Cafe Mocha Ganache Recipe
Heat the heavy whipping cream in a small saucepan over medium heat just until bubbles begin to form around the edge of the pan. Stir in the hot brewed coffee. Remove from the heat and pour over the finely chopped semi-sweet chocolate. Let sit for 2 minutes, then stir until melted and smooth.
Allow the ganache to cool for 15-20 minutes. You don't want to pour the ganache into the cups if it's too hot.
You want it to feel cool to the touch, but still, be fluid enough to pour.
Assemble Cafe Mocha Rice Krispies Treat Cups and add Topping-
Set one cup on a candy saucer.
Just before serving, fill each Rice Krispies Treat Cup with Cafe Mocha Ganache. Top with three miniature marshmallows.
Easy Chocolate Fondue
Ingredients:
8 ounces semi-sweet chocolate, finely chopped
¾ cup heavy whipping cream
Instructions:
It's best to serve chocolate fondue warm, so make this just before serving.
Pour chopped chocolate into a mixing bowl.
Heat heavy whipping cream in a saucepan set over medium heat until it just begins to boil (bubbles will form around the edge of the pan.) Pour the hot cream over the chopped chocolate and let it sit for 3 minutes. Stir until smooth.
Serve the fondue with Rice Krispies Treats. Unwrap the bars and cut each into bite-sized pieces.

- 24 0.78 ounce Rice Krispies Treats Bars
- 10 ounces white confectionery candy coating wafers
- 64 M&M's Plain Milk Chocolate Candies
- 56 M&M's Peanut Butter
- ½ cup heavy whipping cream
- ½ cup hot brewed coffee use flavored coffee, if desired
- 14 ounces semi-sweet chocolate finely chopped
- 24 Miniature Jet Puffed Marshmallows
- optional rolling pin
- parchment paper lined baking sheets
- pastry brush or food use only paint brush
- optional 3 ¼ inch round cookie cutters

I love using the packaged Rice Krispies Treat bars. They are always fresh, are quite convenient, and are easy to find at Kroger in the cereal bar aisle. I've used the bars to make so many treats that I've shared here on Hungry Happenings and I know they'll be many more fun treats to come.

These look really fun to make. If I need to work quickly to make lots of these cups, would you recommend incorporating candy melts into the recipe? I read in another of your posts how this helps keep shapes firmer, but does it help keep the treats more malleable for longer so I have time to make more cups before it hardens? I'd rather not buy the pre-made treats; even though they stay soft forever, I don't like the taste as much. thanks!

How can this be a healthy website when the recipes are full of sugar due to using processed foods. Don't get me wrong the recipes look good. I just expect healthier choices from hungry happenings.

Hi Debbie. This blog features FUN food for holidays and special occasions. On occasion I do share a healthy recipe but for the most part my recipes are for desserts and appetizers that you can serve at a party and they are not meant to be healthy. I think balance is the key to all things and that we can allow ourselves to have fun and indulge on special occasions but eat healthy meals otherwise.
