S’mores Cheesecake Sticks

This summer take your s’mores indoors and enjoy sticks of rich and creamy marshmallow fluff cheesecake layered in between a graham cracker sugar cookie crust and chocolate ganache. These S’mores Cheesecake Sticks are nice enough to serve at an party but easy enough to make for an afternoon snack.

If you love the taste of s’mores but hate being outdoors by a fire roasting marshmallows, then this dessert is for you.

I, personally love the taste of s’mores with the melty chocolate and gooey marshmallow on a graham cracker crust, but I’m not one to sit outside at night. I’m a mosquito magnet. You know how they say you are what you eat, well, mosquitoes must love chocolate too!

I honestly can’t even remember the last time I had a real s’mores made by the fire. It’s been that long.

Moon Pie Cheesecake Sticks -Top a graham cracker speckled sugar cookie with marshmallow cheesecake mousse and chocolate ganache then cut them into pretty long sticks for a festive summertime treat.

But I did enjoy these s’mores treats, maybe even a bit too much! I shared some, but I kept the rest in my freezer and pulled out one stick every day. Before I knew it, the container was empty. I thoroughly enjoyed every single bite.

I created this recipe for Tablespoon.com. When you head over there to see this recipe, you’ll notice they called the treats Moon Pie Cheesecake Sticks. They asked me to make a dessert using the flavors of a moon pie. Well, a moon pie is just a version of a s’mores with the chocolate on the outside. So, whether you call these S’mores Cheesecake Sticks or Moon Pie Cheesecake Sticks, you need to make them. They are that good.
