Rainbow Trix Cereal Bars

Here’s a bright and colorful treat that your kids will love. These Rainbow Trix Cereal Bars topped with white chocolate ganache and rainbow chips are super easy to make and will feed a crowd.

Rainbow Trix Cereal Bars

When I was a kid, summer meant lazy mornings watching cartoons munching on big bowls of cereal before packing up and heading to the pool for the entire day. How fun it would have been to pack these Rainbow Trix™ Cereal Bars to snack on during rest period, ya know that awful 15 minutes when the kids are forced to leave the water so the adults can swim. Now, as an adult that’s my favorite time at the pool, but as a kid it was pure torture. The only thing that made that time bearable was having fun snacks to eat and these treats would have actually made me want to get out of the pool.

I loved eating cereal then and having a treat made out of one of my favorite cereals would have been great.

Rainbow Trix Cereal Bars

When I was asked to make these cereal bars for Tablespoon.com, I was pretty excited. It gave me an excuse to buy a big box of Trix. Being I’m a grown-up, I do usually by more adult cereal, but on occasion I just can resist reliving my childhood and I throw a box of the sweet stuff in my cart.

To make this cereal even sweeter, I whipped up a batch of marshmallow cereal bars then added a layer of white chocolate glaze and a lot of rainbow chips. The child in me was in cereal heaven.

    For somebody who never learned to swim, I still loved hanging out in my best friend’s pool every summer! And a favorite childhood cereal was Lucky Charms for me, but your Trix treats look so colorful and yummy. Happy Summer!

      Oh, my, I can’t imagine not swimming. I still swim all the time. It’s been such a big part of my life. So has cereal! I loved every one except Corn Pops. My favorites were Cap ‘n Crunch, Fruity Pebbles, Fruit Loops, BooBerry. When Cookie Crisp came out, I was in heaven! Getting to eat tiny cookies for breakfast was so cool.

    I remember those pool brakes too, I would get all dried off and then I’d have to get used to the cold water again!! I agree eating those cereal bars would get me me out of the pool even though I can’t swim !!

      As I’ve gotten older, well, old, actually, it’s become harder to get into the cold water, but as a kid, I would jump in without hesitation, even if my lips turned blue. 🙂
