Rainbow Swirl Cheesecake Bars

Brighten up your day by serving these Rainbow Swirl Cheesecake Bars. These blondie style bars have colorful pink, orange, yellow, blue, green, and purple swirls underneath and over top of a creamy cheesecake layer.

Could these cheesecake blondie bars be any more colorful?

Not only is the top swirled with color, but the crust is colorful too.

I had fun transforming a boxed cake mix into these festive treats for my gig at Tablespoon.com. I wanted to make sure every square was bursting with color so I colored the cake batter then created a patchwork type crust before swirling it into the cheesecake batter.

There are a lot of colors in the rainbow, and you may just want to use a few. If you don’t want to use all 6 of these bright colors, change it up and use the colors you like.

How pretty would these be in pink and blue for a baby shower, or spring pastel colors for Easter? If you have a graduation party, you could even use your school’s colors. Or, perhaps you want to make them for your kid’s sports team banquet. Use their team’s colors.
