It’s so fun and easy to turn a few ingredients into this bright yellow Minion Bark. Just grab some Yellow Candy Melts, Minion Icing Decorations and a variety of blue sprinkles and in minutes you’ll have an entire tray of crunchy white chocolate bark.
If you’ve ever been on that simulator style 3-D ride, you know what I’m talking about. It jiggles, and jostles, and jolts you around more than any other ride in the parks.
But, that didn’t stop my excitement every time I saw the Minions.
They were everywhere, in the gift shops, on t-shirts, walking around the park, and waving in the parade.
One afternoon, as we stepped out of the Monster Makeup theater show, we heard music, turned around, and practically bumped right into Gru, Vector, Margot, Edith, Agnes, and a group of Minions.
We watched as they put on a little show before posing for pictures.
The line to meet them was long, the Florida sun was beating down hard, and the humidity was so high it even made my camera lens sweat, so we ducked into a gift shop to cool off and to buy some Despicable Me treats.
When we arrived home, I was inspired to make my own Minion treats and had received some of the new Minion Icing Decorations from Wilton, so I put them to good use and made a tray of Minion Bark.
Simply decorated chocolate barks have become quite popular and I wont be surprised to find them in the amusement park gift shops in the future.
This Minion Bark is super easy to make, you just need a few ingredients.
You can make your Minion bark using pure white chocolate that has been melted and tempered and colored yellow or use melted yellow Candy Melts. I opted for the easy route and used Candy Melts. See my Chocolate Making Tips page for more details on working with chocolate or candy melts.
Wilton recently came out with some fun Minion products including Royal Icing Minion Decorations. Each pack includes Minion eyes, complete with goggles, some hair and mouths. Just peel the pieces off the paper backing and they are ready to be added to the chocolate bark.
To add some color, I tossed on some blue sprinkles. I mixed together jimmies, nonpareils, sugar pearls and confetti sprinkles. I also thought it would be fun to add some Fruit Runt bananas.
To make the bark start by lining a baking pan with parchment paper or a silicone mat. Pour the melted chocolate onto the lined pan and use an offset spatula to spread it into a thin layer. Tap the tray on the counter a few times to smooth out the surface of the chocolate.
Immediately and quickly, top the chocolate with Minion Royal Icing Decorations then toss on some blue sprinkles and add some candy bananas.
Refrigerate just until the center of the chocolate no longer looks wet then remove and cut into pieces. You need the chocolate to be soft enough to cut, so check it every minute until it’s ready. The amount of time it will take will depend on the temperature of your refrigerator.
Once you’ve cut the chocolate bark, place it back in the refrigerator for 8-10 more minutes until the chocolate completely sets.
Remove it from the refrigerator and break the chocolate bark into pieces along the cut lines.
This Minion Bark will be a great treat to serve at a Minion or Despicable Me party but would also be fun to bring along on your trip to Universal Studios.

- Line a baking sheet with parchment paper.
- Pour melted candy melts onto the lined baking sheet.
- Spread into an even layer.
- Arrange Minion icing decorations over top.
- Toss on blue sprinkles and add a few candy bananas.
- Refrigerate until the chocolate sets but is still soft.
- Remove and cut into pieces.
- Refrigerate for 8-10 minutes until the chocolate hardens.
- Remove and break into pieces.
