    Lemon Daisy Cookie Cups

    Pretty daisy-shaped Linzer cookie cups filled with tart lemon curd make for a festive spring or summer dessert. These Lemon Daisy Cookie Cups would be lovely treats to serve at a summertime party, on Mother's Day, for a wedding shower, or a birthday party.

    Sweet daisy shaped linzer cookie cups filled with creamy and bright lemon curd make for a festive spring or summer dessert.

    Linzer cookies have a wonderful almond flavor and a nice crisp texture. I love that they can easily be cut into daisies and then baked in a cupcake pan to create edible cookie cups which can be filled with anything from jelly to mousse. In this case, I used lemon curd. The bright yellow color made the flowers look really pretty and the tart flavor balanced so nicely with the nutty cookies.

    I took the easy route and used store-bought lemon curd but you can certainly make lemon curd from scratch if you prefer.

    Ingredients
    • 1 cup (4 ounces) blanched almond slivers
    • ¾ cup sugar
    • 2 cups all-purpose flour*
    • ½ teaspoon table salt
    • 1 tablespoon fresh lemon zest
    • 1 cup (2 sticks) unsalted butter, softened
    • 1 teaspoon pure vanilla extract
    • 2 egg yolks
    • 1 ¾ cup Lemon Curd
    Instructions
    1. Heat oven to 350°F.
    2. Spread almonds out on a baking sheet, and toast until golden brown, about 5 minutes. Allow nuts to cool completely.
    3. Combine almonds and ¼ cup sugar in a food processor and pulse until the nuts are finely ground.
    4. Whisk flour, salt, and lemon zest together. Set aside.
    5. Cream butter and ½ cup sugar together until light and fluffy. Add vanilla and egg yolks and mix until combined.
    6. Stir in almonds, then add flour mixture and stir just until combined.
    7. Liberally dust a silicone baking mat or cutting board and rolling pin with flour.
    8. Roll cookie dough out to ⅛-inch thickness.
    9. Cut out 28 daisies using a 3 ¾-inch daisy cookie cutter, re-rolling dough as needed.
    10. Press each daisy down into the cavities of non-stick mini muffin tins allowing the petals to overlap the edge.
    11. Leave enough space in between each daisy cup so that petals do not touch.
    12. Prick bottom of each daisy cookie cup about 15 times with a toothpick.
    13. Bake cookies on bottom rack of oven for 8 minutes, then remove from oven and use a pie stamper or the end of a wooden spoon to press down in center of each daisy cookie to reshape puffed dough into a nice cup.
    14. Return cookies to oven for 2-4 minutes until the edges of cookies just begin to brown and centers are baked through.
    15. Allow cookies to cool in pan for 15 minutes then remove and set on a cooling rack to cool completely.
    16. Just before you are ready to serve, spoon 1 tablespoon of lemon curd into each daisy cookie cup.

    Recipe Notes

    Refrigerate filled cookie cups for up to 3 days.

    *Spoon & Sweep method: Use a spoon to fill measuring cup with flour until required amount is obtained. Scooping measuring cup directly into flour bag will firmly pack flour resulting in too much flour required for recipe.
