A Fun Twist on Classic Pancakes
For this recipe, I used one of my favorite cereals β Fruity Pebbles. The cereal adds bright pops of color and a fruity flavor that makes the pancakes feel extra special. Each bite is fluffy, lightly sweet, and filled with those fun little cereal pieces.
While maple syrup works perfectly well with these pancakes, I highly recommend topping them with the simple milk glaze included in the recipe. Made with powdered sugar and milk, the glaze gives the pancakes a sweet flavor reminiscent of the milk left at the bottom of a cereal bowl.

Tips for Making Cereal and Milk Pancakes
Donβt overmix the batter.
When making pancakes, a few lumps in the batter are perfectly fine. Overmixing can make the pancakes dense instead of light and fluffy.
Cook on medium heat.
Cooking pancakes over medium heat allows them to cook evenly. If the heat is too high, the outside can brown before the inside is fully cooked.
Add cereal gently.
Stir the cereal into the batter just until combined. This keeps the cereal pieces intact so you get fun pops of color and flavor throughout the pancakes.
Adjust the milk icing consistency.
Add the milk slowly to the powdered sugar until the icing becomes pourable. It should drizzle easily over the pancakes, but not be too thin.
Use your favorite cereal.
Fruity Pebbles add bright colors and fruity flavor, but you can experiment with other cereals like Cocoa Pebbles, Mini Cinnamon Toast Crunch, or Frosted Flakes.
Keep pancakes warm while cooking the batch.
If youβre making pancakes for a group, place finished pancakes on a baking sheet in a 250Β°F oven to keep them warm until youβre ready to serve.
Add toppings just before serving.
For the best texture, drizzle the milk icing, add whipped cream, and sprinkle extra cereal on the pancakes right before serving.
RECIPE

- 1 Β½ cups powdered sugar
- 2-3 tablespoons milk
- ΒΌ teaspoon vanilla (optional)
- 1 ΒΌ cups all-purpose flour
- β teaspoon salt
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 egg, lightly beaten
- 1 ΒΌ cups buttermilk
- ΒΌ cup granulated sugar
- 2 tablespoons butter, melted
- 1 teaspoon pure vanilla extract
- 1 cup cereal, plus more for topping
- 1 teaspoon oil, to heat with pan
- Β½ - 1 cup whipped cream

Sift the powdered sugar into a small mixing bowl.

Stir in 2 tablespoons milk until smooth.

If needed add more milk, a few drops at a time, until pour-able.

Cover and set aside until needed.

In large bowl, whisk the flour, salt, baking powder, and baking soda.

Whisk together the egg and buttermilk.

Pour into the flour mixture and stir just to combine.

Add sugar, melted butter, and vanilla.

Mix until blended but with lumps remaining.

Stir in 1 cup cereal just to combine. You want lumps in your batter.

Drop a teaspoon of vegetable oil onto a nonstick skillet or griddle and place over medium heat.

Once the oil begins to separate and move around the pan, carefully use a paper towel to rub the oil into the pan, leaving just a light coating on the pan.

Ladle about ΒΌ cup of the pancake batter onto the pan.

Cook until bubbles begin to form on the surface of the pancake and the edges begin to set.

Gently flip your pancakes over and cook until browned on both sides.

Repeat with remaining batter making about 10 pancakes.

Serve immediately topped with the milk icing, whipped cream, and a sprinkling of cereal.
You can keep your pancakes warm in a 250 degree oven, if needed.
