- 10 pretzel rods
- 16 ounces pure white chocolate (melted and tempered)
- OR compound white chocolate (candy melts, almond bark, melting wafers)
- 6 ounces dark modeling chocolate
- 1 ounce white modeling chocolate
- optional, clear piping gel

Dip pretzel rods into melted white chocolate leaving about 1 ½ inches undipped. Place on parchment paper and chill until set. (Note: Fridge for pure chocolate, freezer for compound coating).

Roll the semi-sweet modeling chocolate to ⅛-inch thick.

Cut 0.5" x 2" strips for the base of the mortarboard.

Cut 1.5-inch squares for the top of the mortarboard.

Cut out numbers for the graduation year or letters for a name using small cutters.

Use a small amount of clear piping gel or melted white chocolate to attach the modeling chocolate decorations to the white chocolate pretzel.
Start by wrapping the 2" strip around the top of the dipped portion of the pretzel, then attach the square to create the mortarboard.

Use a clay extruder with a multi-hole plate to make thin white modeling chocolate strands. Cut to 1.5 inches, pinch one end, and attach to the center of the square mortarboard with a small flattened ball of chocolate.

Finally, personalize the pretzels by attaching the date, name, initials, or school acronym.
