Ingredients
  • 6 ounces 1 cup white chocolate chips
  • 10 ounces Biscoff Cookie Spread*
  • 6 Biscoff Cookies
  • *Measure the Cookie Spread in a dry measuring cup and over fill it just slightly.
Instructions
  1. Pour white chocolate chips into a microwave safe bowl.
  2. Heat on high power, for 30 seconds, then remove and stir.
  3. Heat for two more 30 second bursts on high power, stirring after each.
  4. Let the white chocolate sit for 2 minutes then stir again.
  5. If not completely melted, heat for 10-20 more seconds.
  6. Stir in the Biscoff Cookie Spread.
  7. Place a piece of plastic wrap directly on top of the mixture and set aside for several hours until firm.
  8. Optionally, you can place the mixture in the refrigerator for about an hour then let sit on your counter until soft enough to scoop.
  9. Meanwhile, crush 6 Biscoff Cookies into fine crumbs using a rolling pin or food processor.
  10. Scoop out twenty six two teaspoon size scoops and set on a parchment paper lined baking sheet.
  11. Roll one scoop into a ball then immediately roll it into the Cookie Crumbs.
  12. Repeat.
