Raspberry Cheesecake popsicles made in silicone zombie popsicle molds make the creepiest Halloween dessert or zombie movie night snacks.

Ingredients
⅓

water
⅓
cup
granulated sugar

block cream cheese,
full fat
½
cup
heavy whipping cream
1
teaspoon
vanilla bean paste or pure vanilla extract

tablespoons
raspberry puree,
no seeds
Instructions
Create a simply syrup by combining the water and sugar in a microwave safe bowl.
Heat on high power for one minute.
Remove and stir.
Heat on high for 30-45 seconds until it comes to a boil.
Carefully remove from microwave.
Place block of cream cheese in large mixing bowl (with a spout, preferably).
Pour all but 1 tablespoon of the simple syrup over the cream cheese.
Beat with electric mixer until smooth.
Add heavy whipping cream and vanilla and blend together.
Stir the remaining tablespoon of simple syrup into the raspberry puree.
Drizzle raspberry puree into 8 zombie popsicle molds.
Fill the molds with the cheesecake mixture.
Insert the legs, making sure they are facing forward, and pop into the freezer for at least 4 hours.
Peel off the silicone mold before serving.
