  • 4 cups 17 ounces all purpose flour
  • 3/4 teaspoon salt
  • 3/4 teaspoon baking powder
  • 1 cup butter softened slightly
  • 1 1/2 cups sugar
  • 2 large eggs
  • 1 1/2 teaspoons vanilla bean paste or pure vanilla extract
  • 1 teaspoon almond extract
  • pink purple, teal, and orange food coloring
  • 4 ounces white candy melts melted
  • 1 1/3 cups M&M Mnis
  1. Mix the flour, salt, and baking powder together in a bowl.
  2. Set aside.
  3. Cream butter and sugar until light and fluffy.
  4. Stir in vanilla bean paste, and almond extract then mix in the eggs.
  5. Add the dry ingredients and stir just until blended.
  6. Divide the dough into 4 equal parts (about 1 cup of dough per color).
  7. Scoop out tablespoon size spoonfuls of dough and press into a whoopie pie pan creating a total of 8 of each color.
  8. Refrigerate for 15 minutes.
  9. Bake for 10-12 minutes until the edges of the cookies turn light brown.
  10. Allow to cool then remove from pan.
  11. Scoop out tablespoons size spoonfuls of dough and press into individual cavities in brownie pop silicone molds, making 8 hat crowns of each color.
  12. Use your finger to create a well in the center of each dough ball.
  13. Press the dough up the sides of the mold, up to the fill line, about 1/4 inch from the top of the mold.
  14. Freeze molds for 15 minutes.
  15. Bake for 14 minutes.
  16. Remove from oven and use the handle of a wooden spoon to reshape the well in the cookies.
  17. Return to the oven for 6-8 minutes until cookies are baked through.
  18. Reshape the well in each cookie if needed.
  19. Allow to cool completely, then remove from mold.
  20. Pour melted white Candy Melts into a squeeze bottle or disposable pastry bag.
  21. Turn a hat crown upside down and fill it with M&M Minis.
  22. Pipe a line of white Candy Melts around the rim of the hat crown cookie.
  23. Immediately turn one of the round cookies upside down and center it over the hat crown.
  24. Press the two cookies together then carefully, holding the top of the hat crown and the bottom of the round cookies, flip the whole thing over.
  25. Set it on your work surface and pipe a line of white Candy Melts around the base of the hat crown.
  26. Pipe decorations on the hat brim.
  27. Set aside to allow the candy to dry.
  28. Repeat.
