Churro Sundae - Fried Tortilla Boats with Vanilla Ice Cream & Dulce de Leche Sauce

Ingredients
  • 6-8 cups of vegetable oil
  • 1 package 12 count Old El Paso™ Taco Boats™ Mini Soft Flour Tortillas
  • 1 tablespoon cinnamon
  • 1/2 cup sugar
  • 4-5 cups vanilla ice cream
  • 9-12 tablespoons pourable dulce de leche or caramel sauce
  • 1 - 1 1/2 cups whipped cream or whipped topping
Instructions
  1. Pour oil into a medium saucepan.
  2. Heat over medium high heat to 350 degrees, adjusting the heat as needed to maintain the temperature of the oil.
  3. Prick the bottoms of the mini tortilla boats using a fork.
  4. Fry a few at a time, flipping over often, until crispy and golden brown.
  5. Remove from oil and set on a few layers of paper towels to allow the excess oil to drain off.
  6. Combine the cinnamon and sugar in a bowl that is large enough for one tortilla boat.
  7. Toss the tortilla boats in cinnamon sugar then set them aside to cool completely.
  8. Break up one of the tortilla boats into small pieces.
  9. Scoop ice cream into the fried tortilla boats.
  10. Top with some dulce de leche sauce or caramel sauce.
  11. Pipe or dollop on some whipped cream.
  12. Sprinkle bits of cinnamon sugar tortilla onto each sundae.
  13. Serve immediately.
