It’s no secret, one of the most creative bloggers out there is Beth of Hungry Happenings. So when Beth, asked if I would like to guest post on her blog, I could hardly wait to come up with something to create.  I wanted to keep it simple, yet fun and festive…

Sunflower Brownies & Ice Cream

Sunflower Brownies in Ice Cream Filled Pots

Those who know me, know I can’t grow flowers outside but I love to grow the indoor ones that you can eat.

Just like these sunflower brownies, growing out of ice cream pots.  Maybe I have a green thumb after all…let’s get planting!

To make it easy, I started with a Duncan Hines dark chocolate fudge brownie mix and used the recipe on the back for cake-like brownies.  Chocolate jimmies for the top of the cupcakes, ice cream to fill the pots and green jimmies to sprinkles on top of the ice cream.

Supplies

Wilton yellow baking cups.

Small terra cotta pots.

Wooden Skewers.

Yellow and white chevron straws.

Sunflower Brownies

Make brownies according to directions.  Pour into cupcake papers and bake.  Top with chocolate ganache and sprinkle with chocolate jimmies.

Line the bottom of each terra cotta pot with foil to cover the tiny hole.  Fill with ice cream and insert a wooden skewer.  Top with dark green jimmies.

Any leaf will work, I used those off silk flowers I had on hand.  Remove the green leaf and take apart, slide the green leaf over the straw.

Sunflower Brownies in Ice Cream Filled Pots

Here are the three pieces to your dessert.

Keep the mini terra cotta pots of ice cream (with wooden skewer inserted) in the freezer until you’re ready to serve.  Right before serving, slide the straw over the skewer, then top with the cupcake and your sunflower garden is ready to be served!
