I have seen tons of giant cookies that are extremely delicious, but have you thought about making them into a cake?? You need to try these Giant Peanut Blossom Cookie Cakes and Raspberry Thumbprint Cookie Cakes. Trust me, you wont regret it!
How much fun would it be to surprise your friends at your Christmas cookie exchange by bringing along some of these giant cookie cakes to serve for dessert?
At first glance they look just like their smaller cookie cousins, only they are giant. Well, cake sized, actually, but giant in respect to a bite sized cookie.
I chose two of the most popular Christmas cookies to create as cakes, the peanut blossom cookie and a raspberry jelly filled thumbprint cookie.
The peanut blossom cookie cakes are moist and tender and bursting with peanut butter flavor. I even included bits of fresh peanuts and a brown sugar topping to give the cakes a little crunch.
Each cake is topped with a giant chocolate kiss that was nestled in the center of the cake while it was still warm so the chocolate melts slightly. I even made a peanut butter glaze to drizzle on top of each slice.
I’m a peanut butter fanatic. I eat it every single day and would happily eat this peanut butter cake every day too. I had a hard time giving any of it away.
In the spirit of the holidays, I did share these yummy raspberry thumbprint cookie cakes with my friends.
They really enjoyed the delicate cakes with hints of almond extract, topped with raspberry jam and a sweet glaze.
