I don’t work with fondant very often, well, O.K. hardly ever. This is only the second cake I’ve ever made covered in fondant, so believe me when I tell you it’s easier than you would think. I do work with modeling chocolate all the time and the two are very similar. Plus, over the years I watched a lot of cake decorating competitions on Food Network and when I had to cover my first cake I viewed several videos on the subject and the cake turned out great.
