Dr Pepper Syrup:
  • 1 (12 ounce) can Dr Pepper
Chocolate Cookie
  • 10 tablespoons butter, softened slightly
  • 3/4 cups granulated sugar
  • 1 egg
  • 1 teaspoon Dr Pepper Syrup
  • 1/3 cup cocoa powder
  • 1/4 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 3/4 cups flour, plus 1-3 tablespoons more
  • 1/4 cup heavy whipping cream
  • 2 tablespoons Dr Pepper Syrup
  • 4 ounces semi-sweet chocolate, finely chopped
  • 1 cup powdered sugar
  • 1/4 cup white frosting
Dr Pepper Syrup
  1. Pour Dr Pepper into a small saucepan.
  2. Set it over medium high heat and bring the Dr Pepper to a boil.
  3. Reduce heat to medium low and simmer, stirring frequently, until the liquid reduces to 7 teaspoons (about 10 minutes).
  4. Remove from heat and allow to cool.
  1. In a large mixing bowl, combine butter and sugar.
  2. Cream until light and fluffy.
  3. Mix in egg and one teaspoon of the Dr Pepper syrup.
  4. Combine cocoa powder, baking powder, salt, and flour in a small bowl.
  5. Stir in to wet ingredients and mix just until incorporated.
  6. Flatten dough into a disc and wrap in plastic wrap or place in a zip top bag.
  7. Refrigerate for 1 hour.
  8. Dust cutting board with flour.
  9. Remove dough and knead in additional flour, if needed, until no longer sticky.
  10. Roll dough out to 1/8th inch thickness on a flour dusted cutting board.
  11. Cut out 28-32 football shaped cookies using a 3 or 4 inch football cookie cutter.
  12. Set cut-out cookies on parchment paper lined baking sheets.
  13. Bake cookies for 10-12 minutes until firm around the edges.
  14. Remove and allow to cool completely.
  1. Pour heavy whipping cream and remaining 2 tablespoons Dr Pepper Syrup into a small saucepan.
  2. Heat over medium heat just until bubbles form around the edge of the pan.
  3. Remove the pan from heat and add the chopped chocolate.
  4. Let sit for 3 minutes, then stir the chocolate until melted.
  5. Pour into a bowl.
  6. Sift the powdered sugar over the chocolate mixture.
  7. Stir until well combined.
  8. If needed, allow to cool and thicken slightly.
  9. Spread about a teaspoon of chocolate frosting over each football cookie.
  10. Allow the frosting on the cookies to dry for about an hour.
  1. Spoon the white frosting into a pastry bag fitted with a small round pastry tip (#4).
  2. Pipe white frosting laces and stripes onto each football shaped cookie.
