I was surprised how nice rhubarb pairs with chocolate. My husband is one of the few people I know that will eat raw rhubarb. He loves it, and has asked me many times to make some rhubarb desserts. This was my first and he was very pleased.
Bits of rhubarb are baked into the brownie making that chocolate layer incredibly moist and flavorful. Then it’s topped with a creamy no-bake cheesecake filling which balances out the intense chocolate flavor. To top it all off, I poured a homemade strawberry rhubarb sauce over the dessert. I could have just sat down with a spoon and eaten the entire container of sauce, but it was even better on the brownie cheesecake.
