Apple Pie Cupcakes topped with Apple Pie Pops

Celebrate the 4th of July with this fun twist on an American classic.

If you had to choose between a slice of apple pie and a cupcake, which would you choose?
For me it would depend on my mood. I love them both.

 

So, when I found a recipe that combines the best of both of these traditional desserts into one tasty treat, I had to give it a try. The recipe was created by Toni of Make, Bake, Celebrate for her new book Cupcakery.

Celebrate the 4th of July with some Patriotic Apple Pie Cupcakes

 

Toni’s Patriotic Apple Pie Cupcakes looked so perfect for the 4th of July.

In her book, she does a wonderful job showing how each cupcake recipe can be used for a special occasion or party.

Her photography really makes you want to reach in to the pages of the book and grab a cupcake to take a bite. Oh, if only it were that easy.

Fun cupcake ideas from Cupcakery

If you want to indulge, you’ll have to get a bowl dirty and turn the oven on, but seriously these recipes are all super easy. Each one starts with a cake mix which is doctored up to make really fun flavor combinations like Monster Cookie Dough, Grape Soda, Blueberry-Stuffed French Toast, and even Banana Taffy.

I’m excited to try some of those unique flavor combos and am happy I started with these apple pie cupcakes.
The moist vanilla cupcakes are filled with chunks of cinnamon apples and are topped with homemade cinnamon buttercream. I wanted a little pie crust in my dessert, so I topped my cupcakes with little star shaped apple pie pops.
You can eat the pop all on it’s own, or crumble it up over the cupcake to really make the apple pie flavor really come through.

Apple Pie Cupcakes Topped with Mini Apple Pie Pops

Ingredients: (makes 24-30)

Apple Pie Cupcakes– (recipe from Cupcakery)
1 box white cake mix
1/4 cup instant vanilla pudding mix
4 large egg whites
1/2 cup sour cream
1 1/4 cups milk
1/4 cup (1/2 stick) melted butter (cooled slightly)

Filling-
1 can apple pie filling (cut into small chunks)

Cinnamon Vanilla Buttercream and topping-
1 cup unsalted butter, softened
1 cup shortening
1 tablespoon vanilla extract
1/2 teaspoon cinnamon
8 cups powdered sugar
6-8 tablespoons milk
red, white, and blue sprinkles

Mini Apple Pie Pops-
1 box refrigerated pie dough, thawed according to package instructions
remaining apple pie filling from cupcake recipe
1 egg white or 1 tablespoon milk
blue decorator sugar

Instructions:

Follow the instructions in the Cupcakery for making the Apple Pie Cupcakes adding red, white and blue sprinkles to the frosted treat.

To make the Mini Apple Pie Pops-
Preheat oven to 425 degrees Fahrenheit.
Unroll pie dough and cut small stars using a 1 3/4 inch to 2 inch cookie cutter. Re-roll dough as needed to make 48-60 stars. Make enough so you have two stars for each cupcake. I got 28 cupcakes out of Toni’s recipe.
Place the remaining apple pie filling in a food processor or blender and pulse until just slightly chunky. Put in a disposable pastry bag or zip top bag. Cut off the tip.
Brush egg white over one star, set a small lollipop stick in the center, and pipe on a tiny bit of apple pie filling. Set another star on top and pinch the edges together. Repeat.

Brush the tops of each pop with egg wash then sprinkle blue sugar over top.

 

Mini Apple Pie Pop Stars

 

Place on a parchment paper lined baking sheet and bake for 5-7 minutes until the crust turns golden brown.
Allow pops to cool completely.

Insert one pop in the center of each Apple Pie Cupcake before serving.
