These Raspberry Cheesecake Zombie Popsicles are the coolest frozen treats you’ll ever make! The bloody looking 3-D zombie pops will be perfect for a Halloween, Walking Dead, Z Nation, or iZombie party.

When I found the Tovolo Zombie Pops Molds on Amazon, I just had to have them. Not only do the silicone molds create four super realistic looking three dimensional zombie popsicles but they also come with legs instead of sticks. Each set of legs matches one of the four zombies. Plus, the part of the popsicle stick that goes into the pop has a rib cage and spinal cord so when you eat your pops it appears as though you are really eating a zombie. Gross, right? In a good way, though!
The detail in the molds is seriously amazing.
When the box arrived, I immediately stopped what I was doing and got the molds washed so I could start experimenting.
I knew I wanted my zombie popsicles to look eerily white and bloody so I played around using different white liquids, like white Gaterade and some coconut drinks. They were all too thin and the fruit puree blood just blended in, making the pops look pink.
Earlier this summer I made Berry Cheesecake Galaxy Popsicles and had experimented with a lot of variations of the recipe and decided to go that route.

- 1/3 cup water
- 1/3 cup granulated sugar
- 1 - 8 ounce block cream cheese (full fat)
- 1/2 cup heavy whipping cream
- 1 teaspoon vanilla bean paste or pure vanilla extract
- 2 tablespoons raspberry puree (no seeds)
- Create a simply syrup by combining the water and sugar in a microwave safe bowl.
- Heat on high power for one minute.
- Remove and stir.
- Heat on high for 30-45 seconds until it comes to a boil.
- Carefully remove from microwave.
- Place block of cream cheese in large mixing bowl (with a spout, preferably).
- Pour all but 1 tablespoon of the simple syrup over the cream cheese.
- Beat with electric mixer until smooth.
- Add heavy whipping cream and vanilla and blend together.
- Stir the remaining tablespoon of simple syrup into the raspberry puree.
- Drizzle raspberry puree into 8 zombie popsicle molds.
- Fill the molds with the cheesecake mixture.
- Insert the legs, making sure they are facing forward, and pop into the freezer for at least 4 hours.
- Peel off the silicone mold before serving.
- To make the blood, I used raspberry puree mixed with some simple syrup, which keeps it from freezing too solid.
- The zombie bodies are made with a blend of cream cheese, simple syrup, heavy whipping cream, and vanilla.
- I used vanilla bean paste which gives the pops the most amazing flavor, plus it adds little flecks of black throughout giving the zombies an aged appearance. You can use pure vanilla extract if you prefer, but seriously, I recommend investing in some of the vanilla bean paste. I use it whenever I bake and love it.
The zombie popsicles look really creepy and might freak out your family and friends, but ultimately the lure of raspberry cheesecake will get most anyone to take a bite.
