My plan was to get these posted before Christmas, so that you could make these festive cakes to serve to your holiday guests. But, time got away from me. I just had too much to share and not enough time to get it all posted.
Then, I took a week to just chill out and relax. I didn’t get out of my pajamas for 3 days. That’s not like me. I love to work and for the past year spent practically every day doing just that. This week, however, I found that I just needed some down time. Not only was I worn out, but we haven’t seen much sun lately, and I’ve felt as grey as the sky has looked.
Having one of these Pink Donut Cakes sure would have perked me up, but I made them over a month ago.

I had forgotten just how much I love pastry cream, until I made this cake. I spent my teenage years hanging out at our local donut shop eating way too many Long Johns, stuffed with pastry cream, and topped with chocolate. If this cake would have been served to me back then, I don’t think I would have shared.
Well, actually I didn’t share much of this one! I cut it into slices, froze it, and before I knew it the slices were all gone, and my husband didn’t get much.
