All the flavors you love in a chocolate whoopie pie can be served up in a cute little jar. These Mini Marshmallow Cream Cakes make a wonderful dessert for any special occasion. They’d even make great bake sale items.
We traveled to Maine this spring and enjoyed the very best chocolate Whoopie Pies. It was love at first bite. The decadently rich chocolate cookies were snuggled together with a thick layer of billowy marshmallow flavored filling.
I would have loved to have eaten a dozen of them during our stay and wanted to bring even more home with me, but I showed lots of self control. My husband and I shared two huge Whoopie Pies on our vacation and weeks later I found myself dreaming about them.
My mission this summer was to create a recipe that matched the flavor of the Whoopie Pies we ate, but so many of the filling recipes I tried were totally wrong. Many were made with cream cheese or butter and although good, neither style of filling had the right taste.
After tweaking many recipes, I finally got the filling just right.
