Please don’t adjust your set, it’s Saturday and I’m here, Kim, The Partiologist! Because of a schedule conflict, I’m here today to share a super cool cake with you. It’s cool because it’s dripping with icicles and not really too hard to make. I knew you would like the not hard part. Now you can enjoy a winter wonderland indoors with this Coconut Icicle Cake!
Once I spotted this icicle cake on Cake Central made by The Chocolate Strawberry, I couldn’t wait to find the time to recreate.
I decided to add white fondant trees to the top, making it a winter wonderland. And using the wonderful Coconut Cake recipe by the one and only Hungry Happenings, it not only looks good, it tastes good too!
Ingredients:Coconut Cake –
1 Betty Crocker Super Moist White Cake Mix
3 egg whites
1/4 cup water
1 1/3 cups coconut milk well shaken and stirred (from a 14 ounce can, reserve rest for frosting)
1/2 cup sweetened coconut
red and blue gel food coloring
Creamy Coconut Frosting –
1 – 10 ounce bag Wilton Coconut Candy Melts*
2 2/3 cup powdered sugar
remaining coconut milk from 14 ounce can used for cake mix (a little more than 1/3 cup)
1/2 cup (1 stick) butter, softened *Wilton’s Coconut Candy Melts are a limited edition and are only available for a short time, which is so sad. I’ve stocked up on them and will be making more treats using them soon. So, if you want to try this unbelievably amazing frosting, you need to do it this summer, before the Coconut Candy melts are all gone. I found them at Michael’s, but they also an be purchased from Wilton.com. If you can’t find them, just use white candy melts and add 1/4 – 1/2 teaspoon coconut extract to intensify the flavor, if you like. You can even stir in some sweetened coconut.
Let’s get started, shall we?
I baked my cake in three 8″ pans, making sure they would fit to the edge of my cake plate. That way the icicles could hang down past the cake.
I placed my cake plate on the bottom cake, turned it upside down and removed the parchment paper, then I frosted the bottom layer with the coconut frosting, added the second layer and frosted it.
Eventually, I had all three layers stacked with frosting between each layer.
Smooth around the cake with a spatula, leaving some of the cake to show.
Now you need to make the icicles so they can dry over night. Whip up a batch of royal icing HERE.
Fill a pastry bag with the royal icing and a #12 decorating tip.
After the cake is baked and stacked, measure around the cake and the length of the cake. Make sure the icicles will be long enough to cover the cake and even hang past the cake plate. Lay out the parchment paper and begin piping long icicles. Lots and lots of icicles. Quickly sprinkle the icicles with sanding sugar before they dry.
You’ll also need to make your fondant trees, so that they have time to dry overnight too.
Roll out a piece of white fondant.
Cut with three size mini tree cutters. Make as many trees as you want in your winter wonderland.
Let the trees dry overnight and then they’ll be ready for the top of the cake.
Once the icicles have dried overnight, it’s time to place them on the cake.
Using the same royal icing, carefully peel an icicle off the parchment paper and add a bit of royal icing to the back of the icicle.
Place icicles around the cake until the entire cake is covered.
Finish the top by piping a row of buttercream frosting around the edge of the cake.
Add the fondant trees to the tope of the cake, by piping little mounds of frosting on the cake, inserting the fondant trees and sprinkle with additional coconut.
Now you’ve got your frosty and fabulous Icicle Cake!
Or you could just make Coconut Snowballs~
Now that’s one snowball I wouldn’t mind being hit with!
Use the same cake recipe and make into ball.
Dip into the coconut candy melts, sprinkle with desiccated coconut before dry.
Let the snowball fight begin.
Or…why not German Chocolate Cake Balls? I’ll tell you why…
After dipping the rims of the tiny serving dishes in Karo Syrup then desiccated coconut, I topped each cake ball with the Coconut Pecan Frosting.
After baking the cake, I crumbled it up and formed cake balls.
Make the frosting and add a cake ball to the bottom of each serving dish.
Top with the Coconut Pecan frosting and they’re ready to go.
