Bring the great outdoors inside by building a Campfire S’mores Cake. This decadently rich chocolate cake is made of layers of brownie, toasted marshmallow, graham crackers, chocolate marshmallow ganache, and chocolate marshmallow frosting. Then it’s covered in cookies ‘n cream fudge rocks and decorated with hard candy flames.
I’ve been in the kitchen non-stop this summer. I know it may not seem that way, as posts have been pretty sparse here lately, but I’ve been diligently working on projects like this Fire Pit S’mores Cake for my gig at Tablespoon.com, plus doing recipe development for Bob Evans (more on that later) and making lots of candy to take to our exchange student and her family in Germany.
We leave tomorrow for Germany and this week has been nuts between shopping and packing and getting my house organized and bedrooms ready for our house sitters.

I couldn’t leave without sharing this fun summer cake, though. It is the tastiest cake I’ve created for Tablespoon.com, even though there really isn’t any cake in it.
It’s actually chocolate brownie layered with a graham cracker crust, toasted marshmallows and chocolate marshmallow ganache. The whole dessert is frosted in more ganache and decorated with cookies ‘n creme fudge stones to look like a fire pit. On top are cookie logs and candy flames.
